A classic roast chicken with a few garlic cloves and rosemary sprigs the cavity and rubbed with kosher salt and fresh cracked pepper is simple, classic and always a hit.

You can’t beat Chicken Piccata or Chicken Parmesan. Go to foodtv.com and search these recipes. I know you’ll find a good one to try!

I like the filipino Chicken Adobo.

Another favorite is BBQ chicken with paprika thyme rub.

Right now I’m eating homemade pizza topped with pieces of leftover grilled chicken... Yummmm. A bread machine makes preparing the pizza dough a snap. After that, it’s fifteen minutes of prep and 20 minutes in the oven.

Cajun Chicken Pasta

4 ounces linguine pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
1/2 red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 1/2 cups heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
Directions

Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

Don’t know if this is suppossed to be a fancy dinner or not but if you need to feed a crew...One of my favorite dinners(and comfort foods) is Chicken and Dumplings......

Skinless chicken thighs with the bone in (have the butcher skin them). Make a marinade of orange juice, honey, soy sauce, cayenne pepper and marinate them for a couple of hours.

Best on the grill, but since it's cold here, I made them in the oven on Sunday for my girlfriend and I to enjoy during the Giants/Packard game.

So if you're using the oven, cook them at 250 degrees for about three hours. They came out really well. And very, very easy.

KEY WEST CHICKEN

Ingredients
• 3 tablespoons soy sauce
• 1 tablespoon honey
• 1 tablespoon vegetable oil
• 1 teaspoon lime juice
• 1 teaspoon chopped garlic
• 4 skinless, boneless chicken breast halves

Directions
1. In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator overnight.
2. Preheat an outdoor grill for high heat.
3. Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

Had Chicken Keiv last night. It was easy; let me know if you want the recipe, I can send it later. Basically a flattened chicken breast wrapped around a herb butter and then coated and deep fried.
