Fresh Eggs Sink In Water, Stale Ones Won't

Can't remember if an egg is fresh or hard boiled? Just spin the egg. If it wobbles, it's raw. If it spins easily, it's hard boiled.

A fresh egg will sink in water, a stale one will float.

Eggs contain all the essential protein, minerals and vitamins, except Vitamin C. But egg yolks are one of few foods that naturally contain Vitamin D.

The colour of the egg shell is not related to quality, nutrients, flavour or cooking characteristics. White-shelled eggs are produced by hens with white feathers and white ear lobes.

Brown-shelled eggs are produced by hens with red feathers and red ear lobes. Brown egg layers usually are slightly larger and require more food, thus brown eggs usually cost more than white eggs.

China produces the most eggs, at about 160 billion per year. In the US, about 260 million hens produce more than 65 billion eggs per year. A hen can lay about 250 eggs per year.

An egg shell has as many as 17,000 pores over its surface.

There are 150 species of chicken. Chicken are descendants of the red jungle fowl (gallus gallus spadiceus) that lives in Asia.

The chicken is one of the first domestic animals, appearing in China around 1400 BC.

In just a year they've increased in price by an average of $1.25/ dozen.

Most of that was the normal molt-season/winter heating & lighting increase; here, they are dropping again. Down about 80-85cents/dozen last week.

Bargain of the year so far: dozen carton Large-A $1.53; carton of 18, $1.69! 16 cents for the extra 6 eggs. Same size/grade/supplier/exp dates. $3.38/3 dozen or $1.13/dozen at that price.

No, I didn’t know that jumbo eggs came from the oldest hens. Yet another little gem to learn today. Once again, the knowlege I get from FR is quite amazing.

Last year, I got a carton of jumbo eggs from the store where I always buy eggs. In this one carton, 11 of the 12 eggs were all three-yoke eggs. At the time, I was eating three eggs per day. Seeing three triple yoke eggs in the skillet had me running for the camera. For the next few days, I took pictures of these triple yoked eggs. I kept thinking, “what are the odds of this happening”? Since then, when I buy eggs from this store, I always check first to see if the eggs are cracked. In reality, I’m looking for a carton with bigger than jumbo eggs. Haven’t had a tripled yoke egg since. I’ve still got the pictures.

I asked the grocer why the spike in price but he could not say.

The chickens need a minimum of 12 hours of full light to lay optimally. In the winter, that light has to be supplied by (ahem!) electricity.

IIRC, some or even most use 24 hour lighting, with as much sun light as possible to save on power costs.

Also extra heat has to be supplied.

And, that is also when most producers have a forced molt and/or replace older layers with fresh pullets.

IMHO, the “brown eggs taste better” thing came about because brown eggs generally come from smaller, local farms and get to market more quickly. Fresh eggs taste better.

Try using a coffee maker instead.

I keep a dual voltage (J.C. Whitney is cheapest) coffee maker in the car.

Saved me a bundle on restauarnt meals when I blew a head, and had to spend 2 weeks in a motel in Wyoming. No bus service; no car rentals.

I boiled eggs, both hard & soft; made soup; heated water for Ramen, tea, bullion etc; and even used it for making coffee.

Thankfully, the room also had a nuker & my (ahem!) dual voltage cooler.

Perfect Hardboiled Eggs.,p>

1) Sufficient water in pan with eggs...half-inch above eggs.
2) As soon as water comes to boil, remove pan from burner, cover pan and set timer for EXACTLY 17 minutes.
3) DO NOT DISCARD WATER....but remove eggs and place them in a pan with ICE-COLD WATER [with ice cubes] for 3 minutes.
4) While waiting thru those 3 minutes, bring original water back to boil.
5) After 3 minutes are up...place eggs back in boiling water for 10 to 15 seconds.

NOTE: This insures that the laws of expansion and contraction will provide you with eggs that NEVER stick to the whites and peel effortlessly.

I can’t imagine what you must have felt! I know it is not funny....but it did make me chuckle! All that time, loads of eggs and KaBoom...gone in 2 hours. Yep, I wouldn’t do it again either.

My Cochin roster is very gentle and sweet. When I take out "snacks" of leftovers, he comes up to the fence and shuffles his feet and cackles loudly. At first, I thought he was being aggressive, but realized he was calling all the girls. He will not eat until they have all gotten some of the goodies. He knows how to keep peace in the henhouse!

We are lucky to have neighbors who have about thirty chickens just over the hill. They have some that lay white, brown, light brown, green, and blue eggs. They purchased specific birds that lay specific colors.
