If you are going claim your steak, you need to know what you are ordering and where it comes from.

The Porterhouse, T-Bone, NY Strip, Filet Mignon are all very closely related and come from the same section of the primal. Start with the T-Bone. When one side is removed from the bone, it becomes a NY Strip. When the other side is removed, it becomes a Filet Mignon. T-Bones with a larger filet section are sold as Porterhouse.

Well done steaks arent well done. If you want your steak cooked well done you would be better off ordering a hamburger steak. Season your steak as you wish but NEVER more that 20 minutes before cooking. Kosher salt forms a nice crust while table salt just dissolves on contact. I use a light sprinkle of kosher salt and fresh, course ground black pepper.
The best cooking method for a steak depends on the cut and thickness. At one inch or less, a grill is fine. You need to have plenty of room on the grill. In order to get the nice grill marks, you need to grating to be over 300 degrees. Turn the steak 90 degrees half way through the cooking time on that side and move to a new location with hot grates. Remember turn twice and flip once, period.
Steaks are properly cooked by time a temperature. The amount of time on a side depends on the thickness and the temperature of the grill. Ill give the method for cooking a thick steak in a pan and oven later.
ALWAYS let meat rest for at least five minutes. The heat of cooking drives juice out of the tissue and it needs time to reabsorb it. Cut too soon and you get dry tough meat in a pile of juice.
Steak sauce is perfect for covering up cheap meat and poor cooking, otherwise, I cant think of a good use. I dont have any in the house.
