Hopefully using a Dry Rub. Sauce can be overrated.
I tried Herman for about half an hour. Had a hard time understanding him. Love his rapid-fire, however.
Maybe next week.

Up here in the hinterlands there's a growing consensus favoring a molasses-based sauce WITH a rub. That way you can get a crispy "skin" and still satisfy that with flavor and the twin moisturizers of the meat itself and the sauce.
Still looking for Carolina-style vinegar-base up here. I swear they don't go north of Virginia.
Ping me with any barbecue you find. I will fly first class and treat any host(s).
