Canteen Backyard Cookout!!
Okay, who's cooking??

Tomkow? Old Sarge? Tonkin? HiJinx? Auntie Fawnn? Ma??????
Long weekends sometimes are family backyard cookouts. While this weekend is Memorial Weekend, which we in the Canteen take seriously, a little kickoff fun is planned. We thank our Troops for their service to our nation.
We have some beer!
Some eats!
Some fishing....
Some lounging around...

In the ground is the only way to go around here. When it was so dry several years back, we started that to cut down the sparks from the all night cook outs. it works beautifully and the meat is tender as can be!

Howdy Kathy!
Maybe you'll get lucky and get a decent rain tonight. I'll keep my fingers crossed for ya.
The southern part of Tennessee is pretty dry. We could use more rain here. We've only had an inch of rain at the farm in the past 4 weeks and that was last Friday morning. The crops in the area are holding up fairly well but that won't last much longer without rain.

A lot of folks we know cook pig in the ground. It may be a Southern thing.
And you're right.....it does work beautifully.
If I can ever get my "closet door" un-jammed, I'll grab a bunch of napkins. We're gonna need 'em once everyone starts pickin' that pig when it's done. LOL!

Some of the best BBQ I have tasted is prepared this way. Some I have visited have elaborate iron boxes in which the meat is held while cooking. The very best i have tasted was wrapped in wet cloths and buried directly on the coals.
