Some of the best BBQ I have tasted is prepared this way. Some I have visited have elaborate iron boxes in which the meat is held while cooking. The very best i have tasted was wrapped in wet cloths and buried directly on the coals.

The first time I ever saw one of those big pig cookers was right after I moved to N.C. years ago. Lots of folks had them and pulled them behind their trucks when going to a pig pickin'.
I never saw one here while I was growing up.
Now they're showing up more and more.
