Big difference between fresh sage and dried. The flavor of dried sage is to harsh, imo. (Plus it can develop a mold that does NOT agree with me. I get enough migraines without tempting fate with dried sage.) ;)

Figured it was, since you'd been "pickin'" it. (Although I suppose you could have meant that you use so much that you kept running to the supermarket and pickin up more of the dried stuff.) ;)

maybee used 6 fresh cut leaves on a 5 lb roast

this stayed fresh in the olive oil but didnt penetrate the flavor to deeply.
