I dunno. I think that would depend on who you asked. But I believe I’ve heard something like 1500/1300 BC - maybe.

After the destruction of the temple only two sects of 2nd temple Judaism survived
1. the pharisees - who take the written torah, the prophets and add the oral Torah (the Talmud) --> note that the Pharisee Tanakh and the Sadducee Tanakh would have had slight differences in which books were considered
2. the Jesus movement - these became the "Christians"

That’s very probably. In addition I would assume the ban on pork is due to the fact that pork meat spoils quickly and gets worms etc. - it’s better in colder climates.

Yeah - refrigeration (and lack thereof) figure big in dietary practice. Also, I think pork in general disagrees with a good number of people as compared to the non-cloven hoof options.
