You look great!

I discovered the Atkins's Diet a few years back, and I've been grateful ever since.

As you said, the idea that I eat fat and meat and little else is non-factual, but some people are stuck in old stereotypes.

As you have found out, the Atkins' Diet is about changing our lifestyles. . . being aware of which foods contain a lot of sugar and simple carbs, choosing to buy foods with no-sugar added, exercising on a regular basis.

The great news is that I started working out as Dr. Atkins recommended in his book, and I still work out on a regular basis. I also walk my dog more often and farther when I come home from work, and many mornings I take a walk before going to work.

The only foods that I really avoid are baked sweets. . . only eat them in rare occasions.

I eat pretty much anything else, as long as I eat small portions of the "white foods", such as pasta. Since Italian food is my favorite, I always order steamed spinach with olive oil and garlic as a side dish, so I will not eat more pasta than I need to keep my small waist.

I eat more vegetables than ever before; I'm not always hungry or lethargic, the way I used to be by eating sugar and white flour all the time.

Btw, after you learn to read labels, you realize how much sugar is added to processed food. For instance, I buy my mayonaise at the local health food store, because the supermarket mayonaise contains sugar.

And any food ingredient that ends in ose is a form of sugar. . . fructose, sucrose, lactose, maltose, etc. Sugar can also appear under other names, such as syrup, HFCS (High Fructose Corn Syrup), molasses, honey, etc.

I've been on Atkins for almost a month and I have lost 15 pounds and I have more energy than I know what to do with. I LIKE to exercise now (hated it before)! My reflux is gone, my mood swings are gone, my racing heartbeat is gone, constant fatigue is gone, skin cleared up and I feel great! I'm an Atkins believer.

I made "fettucine alfredo" the other day, with a low carb twist.

I got large zuchinni (from my garden so I let em get big), sliced them up in strips about the size of fettucine noodles, boiled them, and then added a nice alfredo sauce, and it was YUMMY. Great texture, great taste.

Now I'm thinking of other veggies, since my zuchinni is all gone.

I like how this article correlated the increase in public fatness with the rise of the lowfat/highcarb dietary recommendations.
I've long thought the same thing.

Haven't tried Atkins because I don't think I can cut carbs out completely even at first, for a multitude of reasons.

What's working pretty well for me is a modified Zone diet. I'm not so good at keeping track of grams etc. but if I follow the following rules it keeps it in balance:

At each meal, 1 protein serving the size of the palm of your hand. For carbs, If "good carb" (vegetable) then 2 servings each the size of your fist. If "bad carb" (rice, pasta, etc) then 1 serving the size of your fist. Fat usually comes with the protein so you don't have to add any.

If I stick with this I'm never hungry, lose weight (albeit slowly), feel better, and can still eat out, I just have to visually balance the portions according to the hand rule above.

I lost 45#'s two years ago on Atkins & have kept it off. It sure worked for me. I eat complex carbs from time to time with no ill affect. Cooking is my art. It's my gift of love for my family. It relieves stress & gives me joy. Learning to cook low carb was a new adventure. I put portabellas directly on grill, brush with a little olive oil, topped with Brie & a few toasted sliced almonds. Served with a field green & garganzola salad it's a very satisfing meal! Please put me on your ping list!

Honestly Mr. Carlo, that was interesting! I remember being in Princes Park in Melbourne and thinking that it smelled different. I guess that's why.

You have been a miracle to me with the recipies you have posted. Have you come up with a pizza yet?
