Thats a new one.. but I'll look again.. I have beefed up my cocktail sauce with finely diced celery and a touch of dry mustard.. It's an interesting change, and adds texture to chew.

Count about 10 carbs for a healthy 1/4 cup. That should be plenty for about a half dozen shrimp give or take a few. I know that sounds like a lot but store bounght ketchup has more sugar per ounce than ice cream and your shrimp has no carbs.

I introduced my step-mother to Splenda (as a sugar alternative) and she was hooked from the first taste. (I was interested in the sweetening factor, without the heavy influence on the BS levels.)

Her BS levels are acceptable (and manageable with diet and exercise) but my father's levels are wildly out of whack! He still won't heed my advise on cuting down on the carbs (he complains if he doesn't eat every 3 hours, and when he does eat, it's so high in salt and carbs that he just propogates the cycle. (sigh)) I tend to think that he has lost his sensitivity on his tastebuds, and has to add extra flavor just so he can taste the food adequately.

Another problem they have is that she can't have certain foods (due to digestive issues) and he is SOOOOO dang picky about what he eats that, between the two of them, it doesn't leave all that much.

I don't mean to dump. It's just a relief that someone else is fighting this battle also. 8-|

I have been taking ricotta cheese and mixing in some splenda and either cocoa powder or an extract, either vanilla or almond. Better than icecream

Here's a good low carb recipe I use a lot.

Cream Cheese Egg Salad

Ingredients:
1 dozen eggs, boiled
1 very small onion, finely diced
1 8oz. package cream cheese
1 t. salt
pepper if desired.

Instructions:
In a bowl put in all of the egg yolks and mash them. Add the cream cheese that you have let soften, and add the finely diced onion and salt. In another bowl dice the egg whites. Then stir the diced whites into the yolk mixture. Chill a few hours and its ready to serve on crackers or shredded lettuce or spread on bread for sandwiches.

I understand your frustration with your father. My Dad (86 yrs. old) lives with us. Thankfully, he is incredibly healthy, but always wants to lose 10 pounds. His solution is to eat all his calories in cookies and banana pudding. My solution is to bake the cookies and make the banana pudding for him.. At his age, I figure he should be happy.
Dad also plays 18 holes of golf every day. I'm sure that helps.

Atkins diets are so much easier in the summer because of all the seafood. That said, I just can't get into one right now, because I am craving fruit. And, truth be told, ice cream. I have become totally addicted to strawberry smoothies made with frozen strawberries and vanilla yogurt.

I never thought of the pepperoni! I guess the lo/non fat ones will do as well. I'll have to give them a try.

About the Pizza Quiche ---I've made it plain, with pepperoni and with just lots of par-cooked onions/peppers/mushrooms on top. It is a great dish -- not just for being a lo-carb one, but just good for being itself!

My son, also a pepperoni-lover, is on Atkins. He slices pepperoni into a bowl and sprinkles mozzarella over it, then nukes it. Says it's enough like pizza to satisfy him.

A really quick way to prepare hard boiled eggs for salad or spread is to grate them on the larger-holed side of a grater. So much easier than chopping them. Sounds like a really good recipe.

I would beg to differ. He's not even hit "retirement" age yet. (He'll be 55 in October)

I know I can only do so much, and he has to want to do such also. I want the big lug around a while longer, but if he won't do what it takes to live better, who am I to argue? See, I remember the horrible effects of diabetes, and how devestating it is when you don't take the 10lbs of prevention. I saw a friend's dad lose both his legs to it, then succumb to the aftermath of the surgery.

Now, let's see if I can add my $.25 worth of low carb food... (Off to check my books)

I've been a lurker since before Clinton's impeachment. But

Forget my recommendations. I didn't know your father was so young. Age really makes a difference where diet is concerned. At my father's age, I feel he should have what he wants (within reason). He is now insisting on a parachute drop for his 87th birthday. My mother and I hope we can accommodate him...only problem is...he wants a parachute! LOL!!!!
