Saw a good meme, cop on phone with some Karen that called to report on their neighbors who were having large gathering for Thanksgiving... The cop says “well maybe if you weren’t such a jerk, they would have invited you too” 😂
Google was fighting large gatherings in subtle ways this year. As usual I smoked a 24 pound stuffed turkey for our guests. I was having a hard time remembering how long this took in years past. This year Google results came back indicating that it wasn’t even possible to do safely. Because the bird’s internal temperature would be in the “danger zone” below 140 for more than 4 hours. One of the top results, “BTW if you are STUFFING that 22lb Bird and smoking it at 225*F, you may want to have the local Hospital on Stand-By...That is the worst thing you can do!”
I always smoke large birds at the highest temperature that I can hold my smoker at, which is around 275*F. The bird’s internal temperature reached 140 in 5 hours. I put it in earlier than normal and ended up reaching 165*F in the middle of the stuffing two hours before our guest arrived. I then put it in an aluminum pan and sealed it in foil and turned the heat way down. Unfortunately, the interior temperature of the bird still hit 175*F before our guests arrived, so it was not quite as moist as I prefer, but there is no way that any harmful bacteria survived that high of internal temperature for 2 hours.
I have been smoking large stuffed turkeys for year and almost always review what other’s are doing a few days before. I have never seen the harsh warnings that I did this year.

We had about a dozen people over which is less than normal. While we were all eating, some neighbors stood in front of our house looking in at our gathering . My wife waved at them and they turned away in disgust. I was a little worried that they might call the Liberalville police in the part of WAshington that we live at. They probably did but the police were probably too busy to respond.
including the 15 at my house for Thanksgiving dinner in NY yesterday...we had a great time!!!
