Back in 1997, I did a temporary work assignment making copies of DOJ documents. Nearly all of my co-workers were Black people (FD: I’m White).
Anyway, the White fella who headed the whole operation was offered tickets to a pro sports game by his own bosses (I guess basketball, since it was late Fall). But he eschewed the tickets and used the money to serve the whole team a huge soul food spread one evening. I mean, the whole works: spare ribs, mac and cheese, collard greens and some other stuff. I actually brought in a huge apple cobbler for dessert after my mother made it. The whole thing was great.
Of course, back then, a White fella could serve up a friggin’ soul food spread for his mostly-Black subordinates without it being a big f*cking federal case.
I lived in Georgia, where you can go to “Gladys Knight’s Chicken and Waffles”. Here in Phoenix, LoLo’s Chicken and Waffles is legendary, and is your best chance to see Arizona Cardinals out and about in public.
If THEY don’t want some good eatin’, I’LL take them.
Moon Pie and Coke or Dr. Pepper.

I can remember when Juneteenth was an everyone welcome BBQ event down in Mexia Texas that was widely advertised on Country Radio, Rock Radio and Soul Radio. People running on I-45 would stop in for authentic BBQ and music.
I asked a friend of the family who’s black and a chef, and he said it’s a sweet-salty thing.
That, there, is a wonderful meal.

My wife will start her day with a bowl of grits. Period. Now, they may be bacon flavored, or with red-eye gravy, something like that, but she’ll eat nothing but a bowl of them for breakfast, with her coffee. Maybe a small glass of OJ or red grapefruit juice on the side. Occasionally I can chide her into toasting a bagel. But we both love eggs sunny side up. Perfect when that yolk is still runny. I like two with toast to scoop up all that runny goodness. We got it good because her niece has a chicken coop she raises hens in for their eggs. Remember when this whole Kung Flu thing hit at the outset, and things like milk and eggs were disappearing when they instituted all the lockdowns? No problem here, egg-wise. The missus would drop off a couple styrofoam egg crates and pick them up a couple days later filled with fresh eggs.

One wouldn’t normally put maple surple(sic) on sausage links or patties BUT if on the same plate as the waffle/pancake the intermingling ain’t all that bad...
Chicken and waffles, a vile combination. I like them both, but never on the same plate at the same time.

Well, God bless him if he understands it, because the concept eludes me. Then again, I’m just an old Appalachian ridge runner from further up north. I tell people down here that some restaurants and households back home still serve sauerkraut as a side dish at Thanksgiving, and they cock their heads and look at me like a dog who just heard a strange whistle. *chuckle* It’s an old German immigrant ethnic thing, same with Amish cooking. Like dried corn - delicious when it’s reconstituted in a saucepan and simmered in milk and sugar. That’s our version of grits.

I’m OK with chicken and waffles, not crazy about them, but I’ll put my fried eggs on top of pancakes or waffles with syrup, salt, and pepper. When I was little (in TX), my mom would even serve a fried egg on top of toast with jam.
They didn’t book any minstrel shows or rap competitions, or play any R&B and Motown music? Shame on Amazon! Not all racists wear white sheets.
