If the virus mutated in two ways - one which killed the victim in an hour and another which gave the victim a moderate cough for a couple of weeks, the second would spread the virus more thus be successful. Viruses succeed by reproducing, not by killing.

Most things usually weaken and lose information over time, which is the opposite of evolution. Evolution refers to the process of change over time. If Covid-19 is changing to become less virulent, then it is evolving to better adapt to its new human host.
Pathogens that cause mild illness are more evolutionarily fit than those that cause severe or fatal illness. The more deadly a pathogen is, the less chance it has to infect new victims.
