You park your SUV in a space and you and your wife prepare to do some shopping. You open the door and a 300 pound jerk is near to the vehicle and he slams your door shut and yells at you and tells you to leave, and says your kind don't belong around here. You get out of the vehicle, and the jerk pushes you back into it, punches you in the face a few times, and for good measure, punches your wife in the mouth, splitting her lip. He walks away and you get out of your car, and you have your concealed weapon in hand. The jerk is about 35 feet away. He sees you and angrily yells that he told to leave and he's going to f... you up! He charges at you, and you only have a couple of seconds to decide. What would YOU do?

Physically assaulted, verbally threatened. Two choices. One, de-escalate. Leave and seek medical treatment for wife, file police report. (Maybe with cell pictures of perp.) Two, teach him and his buddies a hard lesson. Draw on him and command him face down on the ground, hands behind your head. When he inevitably and predictably does not comply but attacks, remove the threat. Remember that phrase, that is all you tell the cops, I removed the threat.
I realize that many here have excellent situational awareness. But the scenario is posed for those who wish to give a answer to it, and not to those who would change it.

I think you are missing the part where the officer has a responsibility to arrest/detain the person who has just assaulted him.
I used to keep my bedside gun with the magazine in the well but no round in the chamber. It made "safing" the gun easy in the morning. Just take out the mag and lock it up. Then one night I awoke to find an intruder standing at the foot of my bed. I grabbed my gun and racked the slide. The intruder ran off.
I realized afterwards that racking the slide took extra time that I might have needed. Moreover, had the intruder grappled with me, I wouldn't have had a free hand to rack the slide. From then on my gun was loaded with a round in the chamber and the safety on. "Safing" it in the morning was a little more tedious, but that gun was ready for use, one-handed, if I ever found myself under attack again.
I strongly recommend having your bedside gun ready to use, without any extra movements needed. Especially anything that would require two hands. In a pinch, your off hand may be busy warding off the attacker, and not available for racking the slide.

I think I’d have end right there and then...
I’d tell my wife to keep her left up a little higher.
Personally, I’d have seen him as I entered the parking lot and parked somewhere else, placing a good distance between us.
If he came at us at that point, both my Wife and I would have opened fire while one of our Sons would have called 911.
