I always thought the term originated during the settlement of the West. Settlers would buy a barrel of water, and then find out it had been replaced by a barrel of gypsum water, useless for drinking. Hence, they got ‘gypped’. My sense is that in this age where everyone is a victim, the term became a slur against the Roma.
