So what’s to stop a cow from doing what cows normally do? For example: mounting each other, rubbing up against trees, rolling on the ground, etc.?

Sven and Lena were hitting some balls out on the back forty, when Lena really slices one into a herd of Guernseys.
So Sven goes to investigate.

He finally lifts a cow’s tail and there’s the ball, firmly wedged in the cow’s butt-hole.

“Hey Lena!” he shouts. “Dis von looks like yours.”

He went to ICS, but survived.

I wonder if they have considered the risk that the animals will suffer infections as a result of this system that places a cannula tube into the digestion tract of cattle in order to directly collect any methane produced.

It's not like cattle live in a hospital environment.

Not that hospital environments are bacteria-free, but they are typically cleaner than a pasture full of mud and manure.
