Wonderful imagery there, Jes. I don’t suppose a whole lot of people admit to liking collard greens...but I sure do! We ate a lot of ‘em while growing up, along with beans cooked with a ham bone.

Prepare the same way as mashed potatoes but whip them with a hand mixer instead of a masher. Loads of butter and salt, maybe a drop of milk. Unlike potatoes, they really don’t need gravy.
