People are confusing their own personal feelings about a word or a subject and whether or not that subject is causing them a legitimate hardship in living a free life. A restaurant using rhyme for the purpose of wit is no more guilty of human rights violations than a doctor discussing a condition with a non-doctor. There’s simply nothing about the name of the restaurant that would cause this woman to have difficulty living her life.
The fact that we’ve become such a severely litigious society and such an excessively sensitive one indicates to me that we’ve forgotten about every lesson and every tribulation ever associated to true human rights violations in the past. Rounding up people and executing them because they’re Jewish is a human rights violation. Giving a restaurant a clever name that happens to reference a genetic disorder is not affecting the sufferers of the disorder in any way other than through some perceived injustice.

I see color in her hair and lips. I also thought true albinos had red eyes, which I do not see here.
