The boss left Monday on an emergency trip to Atlanta as her brother called and said their Dad was in the hospital and not expected to make it through the night. So we are short handed and really having to hustle to meet deadlines. We were a little late, but everything still got done in due time to make the direct deposit.

Low GI “Apple” Crisp
One of the toughest concepts of the Sugar Busters and other low GI diets is the limitation to consume fruit all by itself, not mixed with any other ingredients. Here is a mock Apple Crisp that is acceptable because it utilizes zucchini, a vegetable that has a low GI value. People never guess that this dish contains zucchini.
1 jumbo zucchini
1 cup fructose
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Tablespoons 100% whole wheat flour
Topping:
1 cup 100% whole wheat flour
1/3 cup fructose
1/2 teaspoon cinnamon
3/4 cup rolled oats (regular)
1/2 cup butter, melted
Preheat oven to 350 degrees. Bring a large pot of water to a boil. Peel and trim zucchini. Slice it lengthwise into quarters. Cut all the seeds out. Slice the zucchini into slices that resemble apple slices. You should have about 6 cups of slices. Boil the zucchini slices in the boiling water for 3 minutes. Drain well. Mix together the 1 cup fructose, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 2 tablespoons whole wheat flour. Sprinkle over the zucchini slices and toss to coat evenly. Place zucchini slices into a greased 8 or 9 inch square baking pan. Mix the remaining ingredients together to make the crumb topping. Distribute it evenly over the zucchini. Bake for 45 minutes, until topping is browned and crispy. May be served warm, cold or at room temperature. Yield: 6 to 8 servings.
I do pretty well.
I like the cooking but despise the clean up. I HATE doing dishes.

Cottage Cheese Loaf - Tanas version
1/2 onion, chopped
1/4 cup (1/2 stick) butter
2 lb. cottage cheese (I like Roberts small curd, in the navy blue containers)
3 envelopes George Washington Broth
5 eggs
5 cups Special K cereal
Melt the butter and cook the onions.
Combine all ingredients and place in casserole dish.
(... the top is really good so use a wide, shallow dish rather than a tall, deep one).
Bake at 350 degrees for 1 hour.

Crush the Special K though
I did not crush the cereal this time, but I will next time. I knew I was going to run out of Special K, so I bought a box of bran flakes, so this batch is a mixture of both. I did add soy sauce this time. And no broth granules. I’d bought some Tone’s chicken base paste of some kind last fall, but I decided to leave it out today. I tasted the sauteed onions before stirring them in and they tasted good with the garlic in there too. Should be interesting — I am going to a different church today, a lady I know invited me, they have a bus ministry and feed everyone after church, so I wanted to take lots of food. I am taking two of the pans and leaving the third one here at home.
