Snicker, indeed. You get your fair share of respect, as long as you can flip flap-jacks, that is!

Did you get any of today’s snow? I saw on the news where Flagstaff and Happy Jack are white today.

I woke up to drizzlin’ rain - but no snow. I was surprised to see that Flagstaff got a foot today! It is now all melted, but that is going to cause Oak Creek to swell and may cause some flooding.

Looks like you guys got out of here just in time!

Flap-jack batter is gone - but the ham bone is going to be made into some major bean soup tomorrow (with 15 different beans). Tex-Mex cornbread will accompany. Wish you all could be here to share it with me!

Saw this & thought you might like to try it. Sounds good to me.

Carrot-Ginger Soup
Yield: 6 servings

Ingredients:
2 tablespoons peanut oil
2 cups coarsely chopped onion
1 tablespoon minced fresh ginger
2 large garlic cloves, minced
8 cups vegetable stock
3 pounds carrots, peeled and sliced into 1-inch rounds
2 cups milk
Kosher salt
Freshly ground pepper
1/2 cup dry roasted peanuts, coarsely chopped

Directions:
Heat the oil in a medium stock pot. Add the onion and sauté over medium heat for 3 minutes. Add the ginger and garlic and cook about 2 minutes, until the garlic is lightly browned.
Add the stock and carrots to the sauté and simmer over medium heat for about 45 minutes, until the carrots are very tender.
Transfer the carrots and stock in batches to a food processor and purée with milk. Season to taste with salt and pepper.
Garnish each bowl of soup with chopped peanuts. Serve immediately.
Enjoy!
