The word cereal derives from Ceres, the name of the Roman goddess of harvest and agriculture. Cold cereal is largely an American invention, but its popularity has spread throughout the world.

Waffles were first introduced to North America in 1620, by pilgrims who brought the method from Holland. Thomas Jefferson brought a waffle iron from France, and waffle frolics or parties became popular in the late eighteenth century. Waffles were eaten with both sweet (molasses or maple syrup) and savory (such as kidney stew) toppings.

Blueberry Pancakes!

The first pancake-type foods were eaten by ancient peoples, and were not the same pancakes we eat today. The simple, fried concoctions of milk, flour, eggs and spices were called "Alita Dolcia" (Latin for "another sweet") by the Ancient Romans.

Depending upon the proportion of ingredients and method of cooking, the finished product might have approximated pancakes, fritters, omlettes, or custard. Some of these dishes were sweet (fruit, nuts, honey); others were savory (cheese, fish, meat). These ancient recipes are also thought to be the relatives of waffles, cakes, muffins, fritters, spoonbread and doughnuts. Pancakes, as we Americans know them today, were "invented" in Medieval Europe.

Eggs Benedict, true indulgence

There are differing accounts as to the origin of Eggs Benedict.

In an interview in the "Talk of the Town" column of The New Yorker in 1942, the year before his death, Lemuel Benedict, a retired Wall Street stock broker, claimed that he had wandered into the Waldorf Hotel in 1894, hoping to find a cure for his morning hangover, and ordered "buttered toast, poached eggs, crisp bacon and hollandaise". Oscar Tschirky, the maître d'hôtel and legendary "Oscar of the Waldorf", was so impressed with the dish that he put it on the breakfast and luncheon menus, but substituted ham and a toasted English muffin for the bacon and toast.

Craig Claiborne, in September 1967, wrote a column in The New York Times Magazine about a letter he had received from Edward P. Montgomery, an American then residing in France. In it, Montgomery related that the dish was created by Commodore E.C. Benedict, a banker and yachtsman, who died in 1920 at the age of 86. Montgomery also included a recipe for eggs Benedict, stating that the recipe had been given to him by his mother, who had received it from her brother, who was a friend of the Commodore.

Southwestern cuisine, New Mexican cuisine in particular, has popularized the breakfast burrito. An entire American breakfast can be wrapped inside a 15-inch flour tortilla, accompanied by field-fresh, often very hot, green chile. Southwestern breakfast burritos may include scrambled eggs, potatoes, onions, chorizo, guisado, or bacon. Tia Sophia's, a Mexican café in Santa Fe, New Mexico, claims to have invented the original breakfast burrito in 1975, filling a rolled tortilla with bacon and potatoes, served wet with chili and cheese.

Many regions of the U.S.A. have local breakfast specialties that are less popular nationally. In the South, homemade biscuits served with country-style gravy (also called sawmill gravy), country ham and red eye gravy and grits are one traditional breakfast menu.

The Southwest has huevos rancheros and spicy breakfast burritos; scrapple is a favorite in the Mid-Atlantic states; pork roll is rarely available outside New Jersey and Philadelphia; and New Englanders still occasionally indulge in fried salt-pork, and pie. Specialty sausages also vary in popularity regionally, such as linguiça in Hawaii and southern New England, andouille in Louisiana, and chorizo in the Southwest.

Breakfast In New Orleans

NEW ORLEANS - I went down for breakfast from my room in the Fairmont Hotel. New Orleans, I might add, is still here after hosting the Super Bowl and the annual showcase for mental illness known as Mardi Gras.

I ordered what I always order for breakfast - grits, toast, bacon, two eggs medium-well and a Tab (I realize most people start their days with coffee or orange juice, but I drink Tab, which certainly isn’t as weird as some of the other stuff I do.)

As usual, I went over how to cook eggs medium-well with my waitress.

“I want the white completely done - I don’t want any of it to ooze - and I want the yellow almost done, but not quite. Rather than running, I want the yellow to crawl.”

I sipped on my Tab and glanced through the morning paper, awaiting my breakfast.

The big story in New Orleans was whether or not the state will legalize casino gambling. I’m all for it. Sin was invented in New Orleans. What’s one more?

The waitress brought my eggs. I knew by looking at them they were prepared incorrectly. The yellow had been left on the heat far too long and it wasn’t running or crawling. It was just sort of sitting there, hard as Chinese arithmetic.

“These eggs aren’t what I ordered at all,” I said. “The yellow is overcooked.”

The waitress was very pleasant.

“I will take them back,” she said.

In a very few moments she returned with my eggs and this time they were prepared perfectly.

“I’m so sorry,” she said, “but I punched in your order incorrectly on the computer.”

For a moment, I thought she said she had punched in my order incorrectly on a computer.

That’s exactly what she said.

“You have a computer that you tell how a customer wants his eggs cooked?” I asked, shocked at the very notion of such a thing.

“We recently modernizedour kitchen,” the waitress replied.

How long, America, oh, how long are we going to stand for computers creeping more and more into things we hold dear, such as breakfast?

What happened to ordering breakfast, and the waitress hollering at the cook - a guy named Earl with tattoos on his arm - “Gimme a No. 3, crawling, a side of burnt pig, Aunt Jemimah’s, roll it in dough with one of them sissy Co-colers!”

The breakfast was delicious, but that is not the point here. The point is, I do not want a computer involved in any fashion whatsoever with things I eat.

Computers have caused me enough trouble losing my hotel reservations, my airplane tickets and payments to the electric company.

“How was your service?” the cashier asked me when I went to pay my bill.

“The computer botched my egg order,” I said.

“We’ve been having some trouble with it,” she replied. “Yesterday, it was gone for an hour-and-a-half and came back wearing a tattoo.”’

Hearing that made me feel a lot better.

these great breakfasts. Our high is supposed to be 95 today..
...more normal than the 80s we have been having.

You won’t find real Salsa either.

Yeah, but I'm fine with fake salsa.
My wife has made several "real" salsas over the years, which were okay but nothing that knocked me off my feet.

Good Morning, Canteeners, Cubies, Newbies & Troops! My favorite breakfast is an Italian Omelet from one of the local Double-T Diners in the Baltimore/Annapolis area. Obviously I can't do this every day but it's a favorite weekend treat for sure. Have a great day, everyone!

Good morning, Everyone. Good morning

Thank you, Lauren, for preparing the Canteen for today’s activities. My favorite breakfast is my mother's biscuits-n-gravy. When I order this dish at other places, I splurge with a side of egg. Cracker Barrel's gravy is better than Bob Evan's, I find. The next best thing is Bob Evan's multigrain pancakes.

DC Metroland weather report ~ Today....Areas of dense morning fog. Abundant sunshine. High near 90F. Winds N at 5 to 10 mph. ~ Tonight....Mostly clear. Low 68F. Winds NNW at 5 to 10 mph.

Well, I've got good news and bad news! Good news is that God finally heard my whining over everyone else's and we got some pretty good rain on my homestead. The bad news....it wasn't a slow soaking rain that we need. And, today is going to be hot.

Time for me to make my rounds. But, you stay right where you are. Don't touch that dial. Don't change that channel. Put down that remote. Don't leave the room. Keep your eyes on your monitor. Cause...............I'll be bock!

Now remember, the Canteen is ALWAYS

So, come on in and sit for a while. There's always plenty of coffee, pancakes, conversation, silliness, and plain old BS

LOL. Good morning, Jemian. I agree with you. I love being warm! I'd love to be outdoors, myself. I'll hate it when winter gets here and I can't sit outside on the front porch.

Just finished breakfast. Silly kids didn't want to go out. Oh, well.
Well, at least I have that second cup of coffee still workin' for me.

We'll be off to a local baseball field soon, so my son can play . . . golf. Hey, it's a city program. What would you expect?
