Neat!
I eat cold German Potato Salad - oil/vinegar. When growing up I was shocked to see that there was “American” Potato Salad! I still prefer the German style.

Ok, so now I have to wait until my french fries ... baked potato ... mashed or smashed potatoes ... boild new potatoes ... au gratin ... get cold before I can benefit form this studies results? I once read that a turning point in mans evolution occured when the cooking of starchy plants was discovered and the converted starch was a more usable food. I guess I need to cook only some of the potatos when I make potato chips.
