Emerald Isle punch

A magical layer of green foam floats on top of this pastel punch making it a perfect beverage for St. Patrick's Day. Refreshing as an Irish spring!

Ingredients
1 can (355 mL) frozen limeade concentrate, thawed
1 quart (1 litre) lime sherbet
2 litres lemon-lime carbonated beverage (like 7-Up or Sprite)
4 cups (1 litre) crushed ice

Cooking Instructions
1. In a large mixing bowl or punch bowl, stir together the limeade concentrate and the lime sherbet.

2. Add the lemon-lime beverage and the crushed ice and serve immediately.

3. If you don’t want to serve the punch right away, refrigerate the mixture of limeade and sherbet until just before serving time. Add the carbonated beverage and crushed ice at the last possible moment.

How kids can help: Stir together the ingredients for the punch.

Makes at least 12 servings.

New Neighbours
A Waterford wife was keeping a close eye on her new neighbours. "They seem perfectly devoted to each other," she told her husband.

He kisses her every time he goes out and even blows kisses to her from the window. Why don't you do that?"

"I hardly know the woman"

'Mr Murphy,' said the boarding house landlady, 'I wonder if you would do me a great favour and change the lightbulb in the dining room?'

'Certainly,' said Murphy. Taking the bulb in his hand he stepped on to the highly polished dining table in his hobnailed boots and proceeded to set about the task.

'Hold on,' exclaimed the startled landlady, 'I'll get a sheet of paper to go under your feet.'

'No need,' said Murphy, 'I can reach already.'

St Peter
Paddy Irishman died and went up to heaven where St Peter greeted him.

"And who are you?" asked St Peter.

"My name is Peter O'Toole"

"And what did you do for a living?" asked St Peter.

"I was unemployed"

"Unemployed hmmm?" mused St Peter. "And have you ever done anything good in your life?"

"As a matter of fact I have. I was walking along the street once and I saw a group of bikers who were threatening to beat up a defenceless girl. So I rushed to her rescue, pulled the ringleader off by his hair,
kicked him hard where it hurts and told him and his gang to clear off."

"That's highly commendable,” said St Peter, flicking through the man's file, "but I don't see any record of this incident. When did it happen?"

"About five minutes ago"

A true Irish knows the traditional St Patrick's Day feast is either a spring lamb or braised beef.....served with Colcannon.

Corned beef an cabbage is winter fare, not for celebrating the spring.
