Irish Brown Soda Bread

This recipe belongs to the following categories:

This turn-of-the-century traditional Irish bread uses baking soda instead of yeast for a foolproof recipe perfect for St. Paddy's Day. Rolled oats and sweet buttermilk enhance the flavors of this rustic bread.

Ingredients
4 cups whole wheat flour
1 cup bread flour
1/3 cup rolled oats
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups buttermilk

Cooking Instructions
1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease two baking sheets.

2. In a large bowl, stir together whole wheat flour, white flour, rolled oats, baking soda and salt. Gently mix in the buttermilk until a soft dough is formed. Knead very lightly. Divide dough into 4 pieces; form into rounded flat loaves. Mark each loaf with an 'X' and place on prepared baking sheets.

3. Bake in preheated oven until golden brown, about 30 to 45 minutes.

Bubble & Squeak

Ingredients:

1 lb. (500g) leftover mashed potatoes

1 lb. (500g) leftover cooked cabbage

2 oz. (50g) butter

salt and pepper

Cooking Instructions:

Mix in the cabbage with the potato and season to taste with salt and pepper

Heat the butter in a large frying pan, add the potato mixture and smooth it flat with a palette knife

Fry over a medium heat for about 8 minutes or until under size browns

Place a large plate over the pan and turn the pan and plate over so that the bubble and squeak is on the plate

Heat the remaining butter in the pan and carefully slide the bubble and squeak back in the pan

Cook again over a medium heat until the other side is golden brown

Cut into wedges and serve

Creamy Colcannon

Loaded with hearty cabbage, potatoes and leeks, this satisfying side dish is traditional. If you like, you can substitute dark greens such as kale for the cabbage.

Ingredients
1 pound cabbage
1 pound potatoes
2 leeks
1 cup milk
salt and pepper to taste
1 pinch ground mace
1/2 cup butter

Cooking Instructions
1. In a large saucepan, boil cabbage until tender; remove and chop or blend well. Set aside and keep warm. Boil potatoes until tender. Remove from heat and drain.

2. Chop leeks, green parts as well as white, and simmer them in just enough milk to cover, until they are soft.

3. Season and mash potatoes well. Stir in cooked leeks and milk. Blend in the kale or cabbage and heat until the whole is a pale green fluff. Make a well in the center and pour in the melted butter. Mix well.

Leprechaun pie

Attract all the leprechauns in your neighbourhood with this heavenly green pie filled with white chocolate mousse. Flavoured with mint or vanilla, it’s absolutely delicious for St. Patrick's day, or for dessert any day.

Ingredients
5 squares (1-oz./28 g each) white chocolate
1/4 cup (50 mL) whipping cream
4 oz. (125 g) cream cheese, softened
1/2 tsp. (2 mL) liquid green food colouring
1/2 tsp. (2 mL) vanilla or peppermint extract
1/2 cup (125 mL) icing sugar
1 cup (250 mL) whipping cream, whipped until stiff
1 9-inch (23 cm) graham cracker or chocolate crumb crust
1/2 cup (125 mL) mint chocolate chips or green melting wafers (the kind for candy-making)
additional candies or sprinkles, if desired

Cooking Instructions
1. In a large, microwave-safe bowl, combine the white chocolate and 1/4 cup (50 mL) of the whipping cream. Microwave on high power, 30 seconds at a time, stirring after each time, until the chocolate is completely melted and the mixture is smooth.

2. With an electric mixer, beat the softened cream cheese, the vanilla or peppermint extract, the green food colouring and the icing sugar into the chocolate mixture until everything is evenly blended.

3. Gently fold in the whipped cream, taking care not to deflate the cream, until no white streaks remain.

4. Spoon into the prepared crumb crust, cover with plastic wrap and chill for at least 4 hours or overnight.

5. Melt the chocolate chips or green melting wafers in a double boiler over hot water, stirring until smooth. Drizzle over top of the chilled pie, then return to the refrigerator until set. If you wish, you can decorate the top of the pie with additional green candies or sprinkles before serving.



How kids can help Spoon the filling into the pie shell. Decorate the pie with drizzled chocolate and other decorations.
