Same for heads and tails as well as bones of any fish for making stock.

4Qt pot
diced onions
diced celery
diced carrots
TBSP vegetable oil
Med high heat for about 10 minutes
add 2 cups water
pinch of salt
a little fresh ground pepper
add the fish parts
put a lid on the pot turn the heat down a little and allow to cook down adding 1/4 to 1/2 cup more water occasionally. do this for about an hour to hour and one half. Remove from heat and allow to cool. Strain the stock liquid into a freezer bag and toss in the freezer for later use.

Well, it sounded okay till ya got to the "parts-is-parts" bit! I guess I've never found a use for fish stock. Of course, I find no use for any cooking, but that is another story. LOL!
