U.S. Sauerkraut Sales Soar on Reports it Could Cure Avian Flu; Cure in a Can Sends Americans on a Sauerkraut Buying Spree, According to The Fremont Company 11/3/2005 12:05:00 PM EST

Sauerkraut sales are going through the roof, with some Midwest stores reporting an 850% spike just last week on a recent report that scientists at Seoul National University successfully used Kimchi Sauerkraut to treat chickens infected with Avian Flu. Both Kimchi and traditional Sauerkraut are made by fermenting sliced cabbage, producing a high level of lactic acid, which may be the critical element in preventing Avian Flu.

"We saw our sales climb immediately as this news hit," says Chris Smith, VP of marketing for Frank's Sauerkraut, one of the United States' leading brands of Sauerkraut. "Men's Health Magazine also advised constructing a pandemic kit containing sauerkraut because of its lactic acid bacteria. People are stocking up on sauerkraut like bottled water before a hurricane hits. We hope to be able to keep up with the demand this season," he adds.

Sales of Frank's brand sauerkraut were up an average of 77% (over the same period in 2004) in a survey of sales of 54 Midwest food retailers during week 39 of 2005. "This is an incredible indicator that the American public is taking preventative steps to insulate themselves from this potential pandemic in advance," says Chris Smith. "With nine of the stores reporting an increase in sales of over 150% and one store even reporting an 850% increase what we're seeing is a radical shift from our traditional approach to treating health issues: waiting until we're sick," he adds.

CBS Television WCCO in Minneapolis reported on October 23, 2005 that "When Patricia Oxendale heard about the study, she rushed to her neighborhood grocery store to buy some sauerkraut. 'That's what I just saw on TV so I thought, 'I'm going to take some home,' because I love it -- usually on Reuben sandwiches,' Oxendale said. Others at the store bought the sour cabbage just because they like it."

According to the November 2nd 2005 Chicago Sun-Times, "President Bush on Tuesday outlined a $7.1 billion strategy to get ready for the next pandemic...and the details released Wednesday stress that early on, the public will be depending on scarce supplies of anti-flu drugs and stockpiled vaccines and old-fashioned ways of limiting viral spread." "News like this sends a message to the American public that they had better be ready to use every means available to prevent the spread of this flu because they can't count on the government. Sauerkraut holds out promise to prevent, if not cure Avian Flu. They've been eating piles of the Kimchi variety in Asia and, coincidentally, also had the lowest number of SARS cases in that area." says Chris Smith.

I both envy and salute you. I would love to someday make my own sausage...change the recipe a bit and you have a spaghetti dinner completely from scratch. I have a pasta maker, and the homemade italian (sorry) sausage would really make that meal complete.

With prices as high as they are for natural gas, maybe this is just a creative way of developing an alternative source.

Awww, you are such wimps. Kimchi is good for you. I like the stuff. It is a side dish. One does not sit down and eat a bowl of kimchi by itself. I will be in Maryland/DC in several weeks and my kid has promised to take me to a good Korean restaurant. I have to drive 45 miles to get to one here.

It appears to me that, in Maryland, all anyone does is shop and eat. Unbelievable number of restaurants. I guess someone must have a job.

Savage was talking about cabbage yesterday. Worked for the Roman army, probably still works.

Plug in the Crockpot:

1 small pork loin roast

3 cans of Bush brand Bavarian style sauerkraut with carraway

2 to 3 tablespoons brown sugar

1 medium apple cut in chunks Mix up dumpling dough with Bisquick mix and drop into simmering sauerkraut. Cover and cook according to dumpling directions.

While dumplings are cooking, toast 1 1/2 cups bread crumps in butter in a small skillet until just brown.

Serve pork and kraut sided with the dumplings, with toasted bread crumbs sprinkled over the top.

Be sure and serve chilled applesauce with the meal

This was my family's favorite Pennsylvania Dutch winter dinner. Easy, delicious and the dumplings are light and fluffy. Of course my grandmother used an iron kettle and the dumplings were made from scratch -- but this recipe is just as good.

I would love to someday make my own sausage...change the recipe a bit and you have a spaghetti dinner completely from scratch.

It's really pretty easy. Get a cheap meat grinder with the stuffer attachment and some pork butt or shoulder. You can have the butcher grind it or take it home and trim all the fat off like I do. Mix it in a bowl with your seasoning. Let it stand overnight in the fridge if you can. Then stuff it the next day. I make about ten pounds at a time. All together about three hours of work.

I have a pasta maker, and the homemade italian (sorry) sausage would really make that meal complete.

I have nothing against Italian sausage. It's just that around here these people think that if it's not Italian it can't be any good. I disagree.

But it will heat the house!

Kimchi is actually pretty good stuff. If you can get by the smell you have it licked.

Get yourself one of these.

Remember to take out the cutting disk and blade to stuff the sausage. If you don't but this particular model make sure they include the sausage tube/stuffer attachment.

Yep-half Polish, I like to cook a pork roast on top of kraut mixed with taters, apples, and little brown sugar-stick it all in the slow cooker for the day-yum!

P.S. It's great with beer.
