I would love to someday make my own sausage...change the recipe a bit and you have a spaghetti dinner completely from scratch.

It's really pretty easy. Get a cheap meat grinder with the stuffer attachment and some pork butt or shoulder. You can have the butcher grind it or take it home and trim all the fat off like I do. Mix it in a bowl with your seasoning. Let it stand overnight in the fridge if you can. Then stuff it the next day. I make about ten pounds at a time. All together about three hours of work.

I have a pasta maker, and the homemade italian (sorry) sausage would really make that meal complete.

I have nothing against Italian sausage. It's just that around here these people think that if it's not Italian it can't be any good. I disagree.
