My daughter is featured in this week's (Feb. 3) issue of Woman's World magazine (two full pages with story and photos).
She lost 80 pounds on her low-carb, nutritional diet, put her lupus and rhumatoid arthritis in total remission, takes no medications now and is an entry in the 2004 Mrs. Oregon Pageant in June! So proud of her determination. All this and the mother of six!

Splenda *is* sugar. It's just that something is done with it so that our bodies don't recognize it (and metabolize it ) as sugar. So, there shouldn't be any problems w/the laxative effect. I like Splenda quite a bit and look forward to seeing it in more foods. You want to avoid Mannitol and Sorbitol.

Thank you. I hope so, too. It's still out here, but will likely be gone Monday. Woman's World is a weekly national magazine. Forgot to mention that she also had three surgeries on her knees in the midst of all of this.

She really is. She is a believer in low-carb, flaxseed oil and daily exercise. On top of everything else, she had 3 knee surgeries last year and is now fit and healthy.

LowCarb Crock Roast Italian Beef
- 3 to 4 lbs rump roast
- 1 (8 oz.) can tomato sauce
- 2 1/2 cups water
- 1 tsp salt
- 1 tsp pepper
- 1 tsp parsley flakes
- 1 tsp garlic powder
- 3 bouillon cubes, or 2 tsp granulated
- 1 tsp basil
- 1 tsp oregano
- Dash Worcestershire sauce
- Dash soy sauce
- 1 package Italian salad dressing mix (Good Seasons is a pretty good choice)
1) Put roast in crock pot.
2) Combine remaining ingredients in saucepan and cook over medium high heat until mixture comes to a full boil.
3) Remove from heat and pour over roast in crock pot.
Cook all night on low or 6 to 8 hours on high. About 1 and 1/2 hours before serving, flake meat apart and continue cooking.
Serves 6 8.
Approx. 1 gram per serving

Baking and cooking LowCarb pantry stuffThere are many ingredients used in LOW CARB recipes that are not normally found in typical kitchens. However, I recommend that you consider stocking a few of these specialty additives and items to aid in baking and cooking for LowCarb results. The trick in keeping your eating habits in check is variety and it takes getting used to making new and exciting menu items.. This is a wonderful start but you will have to go shopping! Thankfully, most large supermarkets carry this stuff so there is no real excuses left.. :)
Oat flour, soy flour, High Gluten flour, Xanthan gum, Vanilla Whey Protein Powder, Flax seed, and oil, and any number of liquid and granulated sweeteners such as Splenda.. Read some of the recipes and make note of those than sound interesting to your taste, and get those specialty ingredients in store for use..

There is not a single bottle of low carb condiment on the shelves of the big grocery chain where I shop. Shop on line, you can find everything on some of these sites, and at really good prices.. I will put a few links on this thread, and even list them on my website for quick reference..

As I see it... ;-)Eat what you want, just watch the portions... And get some form of exercise. You won't get a fight from me on about 70% of what you articulated.. but for the rest of us, this is the better alternative.. but your opinion is welcome here.. got any fabulous recipes you would like to share, Low Carb or otherwise.. we're still alive and normal too.. LOLOL.. :)

LowCarb Breading
- 3 oz. bag of pork rinds, crushed
- 2 eggs, beaten
- 1 tsp. poultry seasoning or Old Bay seasoning (see below)
- 1/2 tsp. pepper
1) Coat chicken, or whatever, with egg.
2) Mix other ingredients.
3) Roll chicken in mixture to coat it.
Pan fry chicken in butter or olive oil.
Old Bay seasoning
- 1 tablespoon celery seed
- 1 tablespoon whole black peppercorn
- 6 bay leaves
- 1/2 teaspoon whole cardamom pods
- 1/2 teaspoon mustard seeds
- 4 whole cloves
- 1 teaspoon sweet Hungarian paprika
- 1/4 teaspoon mace
1) In a spice grinder or small food processor, combine all of the ingredients.
2) Grind well and store in a small glass jar.
