DEIPNOSOPHIST

A master of dinner-table conversation.

It comes from two Greek words, deipnon, “dinner” and sophist, “a master of his craft; a clever or wise man”. (From the latter we get our modern word sophistry, which has gone down in the world, so that it means arguments that are undoubtedly clever, but also specious or fallacious.) Its origin is the book of the same name that was written by the Greek Athenaeus in about 228AD, in which a group of learned men discuss a great range of issues over dinner. Though a principal subject is food and the preparation of food, from which we learn a great deal about classical Greek cookery, the subject matter ranges very widely. These days, the word seems to turn up most often in the vocabulary of toast masters.

Pancakes come in many flavors.

Belgian Waffles Marne Style

1/2 cup warm water
1 tbsp. active dry yeast
2 cups lukewarm milk
1/2 cup of canola oil
1 tsp. salt
1 tbsp. sugar
2 cups all-purpose flour
2 eggs, slightly beaten
1 tsp. vanilla
Pinch baking soda
1 1/2 cups sliced fresh strawberries for topping

The night before you want to serve the waffles, stir together in large mixing bowl water and yeast. Allow to stand 10 minutes, then stir in warm milk, canola oil, salt and sugar. With a wooden spoon or rubber spatula, beat in flour. Wrap bowl tightly with plastic and let stand overnight on counter top - do not refrigerate. The next morning, preheat well-greased waffle iron. Stir in eggs, vanilla and soda; beat well. Bake on prepared iron until golden brown. Serve at once topped with whipped cream and fresh strawberries. Serves 4.
