Chocolate Mousse --- 27.3 total carbs but only 4 carbs per serving!

2 oz unsweetended Bakers Chocolate (2 squares)

2 TBS water

6 packets sweetener

1/2 cup heavy cream

1/2 cup unsalted softened butter

4 eggs, carefully separated

1 TBS vanilla extract

1. Boiling water in a large pot. Ice bath in another pot.

2. Float a smaller sauce pan in the boiling water and melt the chocolate and the 2 TBS water until it starts to melt.

3. Put egg yolks in a mixer on high and let run for 5 minutes, yolks will be light yellow and thick.

4. Add butter to chocolate, bit by bit, stirring constantly until you have liquid goo.

5. Once the goo is nice and liquid, add sweetener and mix in.

6. Remove pan from boiling water, put in ice bath if necessary to bring temp of choc down until it's the same as your finger.

7. Slowly add egg yolks to chocolate mix. The mix will curdle if it's still too warm.

8. Add vanilla and heavy cream, Use the hot water to warm mix slightly if it begins to thicken. Set aside.

9. Completely clean your mixer, beat egg whites until very, very stiff. Gently fold whites into liquid chocolate (use boiling water to melt the chocolate if it set up while you were whipping whites) Pour mixture into bowls, cover, chill and enjoy!!

CHEESECAKE -- 4 grams of Carbs per serving

Butter for the pan

2 pounds cream cheese, at room temperature

1 1/2 Cups Splenda (I cut this down to just over a 1/2 cup - I kept tasting until I thought it was sweet enough)

4 large eggs at room temp

Zest of 1 lemon minced (I put the whole lemon in the food processor and then added about 1/2 the mixture - just kept tasting until it tasted good)

Zest of 1 orange (again, used the method above and just tasted)

1 TBS heavy cream

1 teaspoon pure vanilla extract (I always add more)

Preheat oven to 350. Butter a 9 " spring form pan.

Using an electric mixer, beat the cream cheese well on medium speed until it is absolutely smooth. Slowly beat in the sweetener. Add the eggs one at a time and beat well after each addition. Add remaining ingredients, scrape down bowl, stir and combine.

Pour cheesecake into prepared pan and smooth top. Bake for 10 minutes. Turn heat down to 275 and bake for one hour or until the edges are lightly brown. Turn off oven.

Run a knife around the edge of pan and return to oven to cool slowly. Don't worry if center looks wiggly, it will firm up in the oven.

Cover with plastic wrap and refrigerate overnight. Run a knife around the edges again and remove sides of pan. Enjoy!!

I've been taking calcium with magnesium and zinc for several months.........I tried to have a cold last week but it didn't get very far. (I thought it might be nice to have an excuse to get a little rest but no dice.;^)

He looked shaky yesterday but perked up by evening. The funeral is Tuesday..........

Did I mention he also broke up with his girlfriend this week? AND turned 21?

A week he won't forget for awhile...........

We are having a little dinner party for him tonight.......grandparents, uncles, a family friend, and hopefully a couple of his buddies, plus our older boychild & Em.

I ordered the cake Friday and asked them to decorate it using red, white, and blue, and to put an American flag on it.....they did a beautiful job.........there's a big eagle/flag decoration in the middle, and small flags in each corner, and R W & B stripes down each side..........

I was hoping they'd have something "military" but no luck..........but this is very nice. He'll like it.

WOW, I wish you were my aunt, what a breakfast! I had a piece of cheese, coffee w/whipped cream topping and hardtack. Roomey had cereal, yogurt, a bagel with whipped cream cheese, grapes and coffee w/whipped cream topping.

Toby, I think Gen. Clark is practicing politics so he can be ole broad beam's boot licker vp. Have you noticed Gen. Clark is being touted as very smart, which he probably is, lst in his class at West Point, a Rhodes Scholar, has been a fast learner with tv sound bite answers during his 3 appearances on CNN? The same thing was said about x42, brilliant man, Rhodes Scholar (who never really finished his course, but was given a Docter of something or other)who could talk about anything anywhere. We were told our military would be in /Bosnia for 6 months, it's been 6 years. Compare these two candidates with our present President. The presstitutes said he couldn't put two sentences together, he was dumb, he had no gravitas, he was a bumbler. But look at what this dumb man does. He does what he says he's going to do. He won over Iraq in 3 weeks as compared to the other 2s 78 days. He put troops on the ground and in the air. The other 2 did it in the air. He has put people in place in Iraq to help the Iraqis find their own type of free government, he did away with the most horrendous leader we have ever heard of, even worse than Hitler and Stalin. He's told us we would be in Iraq until we were no longer needed and we would do whatever it took to keep the Iraqi citizens free. That's more than the democrats have done AND Gen. Clark is a democrat. He is a democrat because Karl Rove didn't call him after 9/11 to come to the aid of this administration and help them out with his expertise of winning wars. Gen. Jello is kind a wiggley type person, me thinks.

I know this is long but Jeff's life was short and I want people to know what a talented and brave kid he was. Hope you don't mind.

"Jeffrey David Srenaski, 21, Green Bay, passed away late Friday evening, September 19, 2003, at home after a two year battle with brain cancer (glioblastoma multiform). Born on November 14, 1981, in Green Bay, he is the son of David and Susan (Christensen) Srenaski. Jeff attended Jackson Elementary, Franklin Middle School and graduated from West High School, Class of 2000. While at West, he was active in many of the school’s bands playing drums and percussion earning the Louis Armstrong Jazz Award in 2000. Jeff enrolled at NWTC in Retail Business Management, planning to open his own drum/music shop. He was an excellent drummer with great knowledge and appreciation for the history of drums. Jeff would practice and jam with his friends, Ray and Jon hoping to start a band with them someday. He enjoyed working at Wal-Mart West until his illness prevented him from continuing. Jeff enjoyed model trains and would work on them with his dad and their friend Jim. He also enjoyed bowling, shooting pool, and classic cars. Jeff’s love of music and trains took him and his dad on an Amtrak trip in 2002 to the Rock and Roll Hall of Fame. During his illness, he never gave up hope or complained and did not want anyone to worry about him. He will be greatly missed by his parents and sister who lovingly and willingly took great care of him during his illness.

He is survived by his mother: Susan Srenaski; father and step-mother: David Srenaski and Sandy Christofferson; one sister: Jennifer Srenaski; godmother & special aunt: Peggy Christensen, one step-sister: Leslie Christofferson all of Green Bay; best friends: Jon, Eric, Vince and Ray; aunts, uncles and cousins.

Preceded in death by maternal grandparents: Russell and Hildegard Christensen; paternal grandparents: Clarence and Gertrude Srenaski.

Visitation at WEST MASON MALCORE Funeral Home, 1530 West Mason Street, Monday from 4:00-8:00 pm. Parish wake service 7:00 pm Monday at the funeral home. Visitation will continue Tuesday morning at St. Agnes Church, 1484 Ninth Street, from 10:00am until the time of the funeral. Funeral service 11:00am Tuesday at the church with Rev. Richard Getchel officiating.

Jeff’s family thanks Dr. Thomas Wascher, David Bond, Unity Hospice and all of the family and friends who provided wonderful care for Jeff during his illness. A very special thanks to those who organized the benefit for Jeff in December 2002 to help the family and to all who donated.

Although Jeff’s time with us was limited, he taught us all how to face adversity with dignity and grace. He taught us all humility and compassion and how to care for someone other than ourselves. God must have needed a new drummer in heaven when he called Jeff home. When you hear the thunder it is Jeff being able to do the one thing in this world he loved and that was to drum. "

Vince is my son (his nickname among his buddies).

You're such a thoughtful Mom, a good Mom to smooth the way for getting over a glitch in his life.

Oh, to be 21, it was such a fun year....I was a Sgt, had the world by the tail and willing to give it a whirl. Ohhhh, that was a good year.

Just a rant from crazy California. Can't the Democrats keep their carpetbaggers home? We have had, in the last week, X42, Jesse Jackson, Gore, Edwards, and are expecting that governor of Oregon - he is supposed to appeal to the "Asian-Americans". And, of course, the salivating press have not mentioned once that these people are NOT from California and should keep to their own states.
On the other hand - the L.A. Times this morning had, as front page feature, with several pages to follow, a heartrending account of some mean American forces who mistakenly killed three innocent civilians on that last big day in Bagdad and how it has just ruined their families and ANY trust Iraqis might have in America.

Evidently McClintock had a very successful talk with a monthly Republican group yesterday. Usually 150 people but yesterday 350. This happened at our own Yacht Club and we didn't even know about it. Very much out of the loop.
We WERE talking to a staff commodore buddy who is currently on dialysis 3 times a week. No transplant possible for people our ages.

I must go wrap the private's b.day gifts. We got him a wool army blanket:) and some nice, warm military issue socks for his drill weekends; and a huge "Army" flag for his room; and a small roll of camouflage toilet paper......silly, but he'll love it).......and hubby got him a small chocolate guitar; and then we traditionally give each kid a check for the amount of their age on each birthday.

Then I have to get the table ready and make lemonade and get ready to watch the Packer game!!!
