By this I mean as a driver or a passenger. Hitchhikers will count too (though I have never done that).
Here are the ones I've been on, based on memory, broken down by state:

I've got a neighbor just like you. He does regression analysis on local rainfall data and has carried on a correspondence with the US Treasury (I've seen the file!) on the continued desirability of minting pennies.
Both of ya need more to do in life.

Outside of California, only I-5 comes to mind, but I'm sure I hit more than a few going from NYC to DC a couple years ago, and then whatever the Beltway is called.
But there are a heck of a lot of them just north of here around San Francisco and San Jose, including I-5, I-80, (I'm gonna stop putting I in front of every one 'cause that's not how we say it here) 280, 380, 580, 680, 880, 205, 405 (LA), and that's about all I can think of right now. I almost exclusively drive on CA highways when moving about, including 17, 1, 152, 129. I also drive on 101 quite a bit, but that's a federal highway (not interstate and no red/white/blue sign, I don't really get it but it's officially called US-101).
