President Donald Trump isn't exactly known for his refined palette.
But Thursday's state dinner with Chinese President Xi Jinping will be an elegant affair. Conspicuously missing from the menu, however, is an American dining staple, red meat.
"The first course offers a refined and silky-smooth velouté made of sweet yellow squash. This course is gently blended to highlight its delicate seasonal flavors of earthy wild mushrooms, sautéed with fresh herbs. Together, these ingredients create a rich fricassee, complemented by crispy pancetta for a savory and smoky contrast. A finishing drizzle of scallion oil adds vibrance and a subtle allium brightness to the dish."
"The second course is prepared delicately with fresh seabass and coated in toasted sesame seeds."
"The fish is served with crisp baby bok choy and roasted garden eggplant, creating lightly caramelized flavors."
The two heads of state and their guests will enjoy vanilla crémeux and White House honey iced cream, walnut frangipane and sour cherry confit for their final course.
"The dessert course is a smooth vanilla crémeux with a vibrant sour cherry confit center, set a top a rich walnut frangipane."
Famous American tenor Christopher Macchio, who was featured at the Republican National Convention in Dallas a few weeks ago, will entertain for the evening, along with military musicians from the Army and the Marine Corps.
"The décor for the evening is an expression of warmth and celebration and draws on the color red’s longstanding cultural significance throughout Chinese history," the First Lady's memo says, and will feature "urns overflowing with red blossoms and tables covered by red linen with dahlias and ranunculus."
After the dinner, both presidents are expected to retire for the evening.
Friday, Trump will take Xi on an expedition to the National Archives before the communist leader departs the United States mid-afternoon.

What? No chittlins, turnip greens and poke chops?
Well, now I’m hungry.
Hopefully there is no “go” as we were served as an appetizer in Shenyang.
Didn’t see any kobe beef.
I know, if you can’t say something nice...

Seabass, It was a funny joke on MST3K , The Blood waters of Dr Z episode. In this notoriously cheesy 1972 horror film, a mad scientist named Dr. Leopold injects himself with a formula to transform into a walking, vengeful mutant fish-man. Because the monster costume is so absurdly low-budget and looks like a cross between a catfish and sea vegetation, viewers and riffers famously mocked the idea that turning into an “evil seabass-man” was the doctor’s master plan to take over the world. Hope XI isn’t a fan of Joel and the Bots.
Damned shame neither the writer nor his editor know the difference between “palette” and “palate”, as used in the first sentence of this article. The first word, the one used in the article, refers to the board used by fine painters to hold the selection of paints to be used to create a painting. The second word, the one that should have been used, refers to a part of the mouth used in the sense of taste. Since the article was about food presented at a state dinner, “palate” is the correct word.
Apologies for the diversion into word usage, carry on with the discussion of the political discussion. Just indulging a pet peeve here…
Looks like their meal menu makes mine look pretty common...and pathetic. Let’s move along to what’s on the business menu.
Did the menu receive judicial approval?
My son brings me sea bass from Massachusetts. Love it.
Thank you.
(You’d think AI would pick these up, but it’s trained on web content.)
Nothing wrong with fresh sea bass. In fact there’s everything right with it. One of the (few) nice things about living in New England.
Love it but I’m spoiled. We went to Canada when I was a kid and had Walleye everyday.
The menu looks like a yummy fusion of our two cultures. Really nice touch President Trump.
