My 31 year old son and I have become very close in the last couple of years and I find myself remembering little vignettes of my life I relate back to him, and he said; "Dad, you should sit down and youtube all these things"
Great idea, but I don't know how.
Howe do I start a youtube (or SOME kind of recording) that will never end and I can just click in to say (like Mary Lou Retton) ... " and another thing"
How can I start an audio/video recording that I can just keep adding in ?

Carry a smart phone.
Even if the iPad doesn’t have the horsepower, to store everything, you can get yourself a USB connected one terabyte or 2 TB drive,, and offload everything to those. Just make sure you put a label on them to let your people know what they are for when you’re gone.
It’s a good thing to do, your family will appreciate it.
After you solve the problem of how to record, then you have to figure our where to save the recordings and transcriptions.
Do you use a genealogical tool like Ancestry or MyHeritage? They have facilities for storing family stories like you are creating. Might be a good place, but you need to pay every year to keep your account going. I do that, but it is expensive.
The biggest problems will be 1) how can you choose a storage company that will be around, or 2) how can you choose a storage medium that will be around a long time. File formats go extinct like the very original Word formats. Once that happens, the content is no longer readable.
That’s why a dual spoken or video solution combined with a written document is a good idea. Somebody suggested self-publishing on Kindle and I thought that was an outstanding idea. Make hard copies of your self-published book and give it to your lawyer to be included in your family trust. Then it can be handed out by your executor when your will is read. At least that way, your immediate posterity will have copies.
