When Presidents Donald Trump and Xi Jinping sit down to a lavish state banquet in Beijing on Thursday, one Chinese cuisine is likely to feature on the menu: Huaiyang food, from the region surrounding Shanghai, known for its mild and subtle flavours, refined knife-work and emphasis on seasonal dishes...
"One of the key strengths of Huaiyang cuisine is its broad appeal. Its flavours are widely acceptable and accessible to most people ... including international guests," said Shi Qiang, executive chef at Gui Hua Lou, an upscale Huaiyang cuisine restaurant in Shanghai...
China even created a chicken dish named after US top diplomat Henry Kissinger, served to him during his secret visit in 1971, and dishes served to foreign leaders are often turned into "set banquets" by local restaurants.
Some iconic Huaiyang dishes include tender, springy "lion's head" pork meatballs, Yangzhou fried rice, "squirrel fish" deep-fried in a sweet-and-sour sauce, and "wensi tofu" - a block of tofu sliced into thousands of fine strands...
"It's great for banquets because it's lighter than the food of Shandong in China's north, not spicy like the foods of the southwest (like Sichuanese), and more approachable and less reliant on exotic ingredients than Cantonese, the big cuisine of the south," said Christopher St. Cavish, a food writer based in Shanghai.
"In the most basic description, it's 'safe'.
During Trump's last China visit in 2017, he was served Huaiyang-style dishes like braised vegetables in soup and stewed beef with tomato - a nod to his penchant for well-done steak.

What? No “Goodyear” on the menu?
That was our nickname in late ‘76 for sea slug. The Chinese would crosshatch the big slug. It had the taste, appearance, and tenderness of Goodyear tires.
Oh wow! Never tried.
All I know is, I’m not a fan of American-takeout-Chinese food. LoL but Huaiyang seems up my alley.
My son and I ate at a new Chinese restaurant in Mountain View, CA a couple weeks ago called “Mr. Bao.” It has “Shanghai Style” food on the menu. Neither of us had seen it before and we’ve been to many Chinese Restaurants. It’s a small, unpretentious hole-in-the-wall on Castro St. with a short menu. The food was REALLY good and we both want to go back for an encore. Prices were affordable, too.
Shanghaineese and Cantonese food are the best.
All restaurants in Mountain View are Chinese.
No wonder Trump wants so badly to build his White House State Ballroom. Compared to the lavish facilities he's been treated to, the industrial tent they use at the white house to treat guests must infuriate him to no end.
Definitely. Saudi Arabia in particular, goes WAY out for Trump. A white Arabian horse caravan, the whole 9 yards.
So when Prince bin Salman visited the White House, I’m sure there may have been a sense of inadequacy by comparison?
Well, shortly thereafter...Trump made his ballroom announcement.
When we lived in San Francisco, we at everything from everywhere. Russian was our fave when they had a very $$$$$$$$ out near the beach. Other than that extravagent place, we discovered that the dirtier the windows, the better the food, more authentic because they hadn’t been Americanized yet. A couple of great Chinese restaurants of course, but the little dives were xlnt too.
Doubt that Trump gets the dirty-window treatment in China. Wish he’d send us some take-out.
