Come trick-or-treat season or any time you’re presented with a choice from a candy jar, selecting just one chocolate bar from the mix is about as difficult as picking a favorite child (or so I’ve heard from parents). Sweetness levels vary widely, as does the source of the chocolate, the mix-ins or fillings, the texture, and more.

To help us narrow down the competition and build a shortlist of the best bars for s’mores, snacking, and sneaking into cakes, we called up a handful of our favorite culinary pros from coast to coast for some sweet talk. Read on to discover which chocolate bar these chefs love—plus, brilliant ways to add it to your menu this week.

The Best Chocolate Bar, According to Chefs

Just like with chocolate chip cookies, many of us have a different definition of “perfect” when it comes to chocolate bars. The chefs shared quite a diverse collection of favorites, ranging from trick-or-treat mainstays to trendy artisan chocolates. But only one drew multiple votes, earning the crown from chefs in our poll: Tony’s Chocolonely.

Crunchy Frog is always my favorite. Lark’s Vomit is right up there, though.

I remember that the whole town smelled like chocolate. And the at tree lights were candy kisses.

My father was a M&M/Mars candy salesman, from the 1950s through the early 1980s. I grew up on M&Ms, Milky Way, the "original dark chocolate Mars bar", 3 Musketeers, Twix, Snickers, and all the other Mars chocolate bars. It's a miracle I don't weigh 300 lbs, lol. I have had a lot of cavities, though.

Once my father retired, he would sit in his chair and read... and munch on Hershey's Kisses. Go figure. :-D

Tony’s Chocolonely earns bonus points for its focus on fair-trade sourcing and paying cocoa farmers a higher price than the industry average for their beans.

That’s the secret ingredient that makes it taste better? Hershey’s for us non-connoisseurs peasants get the award.

I recommend Lindt Dark Chocolate (or Intense Dark Chocolate) with Intense Orange or (if you can find it) Blood Orange flavor.

It looks like they only selected strange, "eco-conscious" chocolate bars, most of which I've never heard, and whenever I've tried "eco-conscious" chocolate, they just taste like dried, hardened dirt. Then they threw in the random Baby Ruth bar for that list.

For me, nothing beats Ghirardelli. Their squares are superior and just the right amount for snacking, and it's the only chocolate I use for chocolate chip cookies. Their 60% cacao chips are amazing (and I will eat a tablespoon while making my recipe, so my cookies are always short a few chips). I think they chose the Ghirardelli chips as superior on America's Test Kitchen. Growing up, I used Toll House (like most people) until I tried the 60% cacao chips and went, "What the heck have I been doing all these years?" Toll House tastes like over sweetened wax blobs next to Ghirardelli.

For cakes, brownies, and other baking, I will also use Guittard, or even Hershey's Dutch process cocoa powder. This reminds me that I need to stock my pantry for holiday baking. I'm making Tiramisu this year and need a really good chocolate and espresso powder for that.

Now I'm off to replace the struts in my SUV hatch. There's nothing I can't do!

Mr. Hilton: "Oh, we use only the finest baby frogs, dew-picked and flown from Iraq, cleansed in the finest quality spring water, lightly killed, and sealed in a succulent, Swiss, quintuple-smooth, treble-milk Tony's chocolate envelope, and lovingly frosted with glucose."

Inspector:: "That’s as may be, but it’s still a frog!"

Mr. Hilton: "What else?"

Inspector:: "Well, don’t you even take the bones out?"

Mr. Hilton: "If we took the bones out, it wouldn’t be crunchy, would it?"

“The wrapper is festooned with sanctimonious twaddle about “fair trade” and such.”

That crap puts me off so much that I often WILL NOT buy product just because of their sanctimony.
