My wife and I are going to Spain next year so we don't mind what they do to the wild boars. However, DON'T TOUCH the Cerdo Iberico. That's the breed of pig from which they make the Wagyu of pork--- Jamon Iberico. The Cerdo Iberico are treated very very gently. Allowed to roam free in the forest of oak trees from which fall acorns which they feast upon. They live lives of utter bliss with fresh spring water and just the right amount of rest and exercise so as to bring their muscles to just the proper firmness while the periods of rest allows for the development of the correct fat layers that enfold the meat.
After the Cerdo Iberico live their wonderful lives, at the proper time they go on to the next stage in which they are processed over time with extreme care and artistry to produce the magical Jamon Iberico which many consider a greater taste experience than even Wagyu beef.
