We like to buy the whole tenderloin when it goes on sale and butcher it ourselves. A good sale is around d $10/lb (though I think that p4ice is slowly going away, not seeing it much any more). Takes a little time to cut the silver skin from the loin but worth the effort for the savings. Takes about 1/2 to process and freeze.

As for finding the healthy merits of KETO, I’ll note that a nice marbled Ribeye is far superior to fatless filet mignon.

Ideally, I want about 75-80% fat to 15%-20% protein.

Fat has been derided for so long, even steakhouses take the fat off their steaks thinking they are more ‘healthy’ for the customers.

Most places serve dry fatless cuts of meat that are akin to eating a piece of tire rubber............

We just took a course and processed a half of a beef carcass!! The instructor showed us how to remove the tenderloin...vs. letting us do it as it is a big $$ item in their market.

Texas aTm does a great job for a two day course! The knowledge you get from the talks and the hands on yield of a half beef!!! And, a prime rib dinner that was truly better than most restaurants- from start to finish I want to repeat it next year.

Beef has gotten ridiculously expensive, including the so-called "cheap" cuts like chuck roast - even ground beef, which sustained a lot of us during tough times is around $6.00/lb. now.

Filet Mignon is for very special occasions now - got two small ones at a local butcher - dry aged - $60.

I have a bottle of Prosecco on hand, but we never have our beef cut into Filet for some reason.

So, it’ll have to be BLTs and Prosecco for supper, tonight!
