I love potato wedges...Finally learned the trick...corn starch...OMG crispy outside, creamy inside.

And it's potato salad season...Yay!!

The lo-carb and Paleo people love the sweet potato for a gentle slow release of carbs. So it is low glycemic index

sweet potato is not related to the common potatoes we eat

I don't have the diabeetus but I generally scoop out a lot of the baked potato, fill what remains with cheese, bacon, sautéed red onion, and toss them back into the oven until the skins are crispy.

Eat the skins because they're good for you. Add a dollop of sour cream and some fresh chives for additional mid chain triglycerides and green vegetables.

A complete meal!

Since the salad has been refrigerated, the carbs are resistant carbs. Even better.

The skins are my favorite part. When I see people eating the potato and leaving the skin, I want to grab it for myself. But that would be uncouth, I think.
