And here I was, expecting to read how she had become a key player in the history of the tortilla chip, perhaps by making a name for herself through innovative packaging.
I have SO MUCH SALSA in the pantry that I won’t need to can any for two more years. My Peach Tree (’Contender’ Zone 5) exploded with fruit year before last and even though I gave away CRATES of peaches to neighbors, I still canned a bunch as Peach Salsa. First time I ever saw that was at the grocery store; ‘Newman’s Own.’ How hard could it be to make my own? It wasn’t!
Here’s a great soup recipe that calls for tortilla chips, if anyone wants anything more substantial for supper than just Chips and Salsa. Super easy and delish!

Seriously disappointed. I thought 1864 — wow, Rebecca and her tortilla chips have been around a lot longer than originally claimed.

Meanwhile, I have done my best to acquaint Australians with good Mexican food. None that I found there was worth a damn. While visiting my daughter in Sydney, I cooked a Mexican meal for her friends. I found corn tortillas at Wollies, but there was no enchilada sauce anywhere, so I had to make it from tomato sauce, black tea, and what dried peppers I could find. Oddly, there was no corn oil to be had in any store down there, so I had to fry everything in canola. Adding a pureed green bell pepper to the refried beans gave it a twang and was a revelation to the Ozzies. The best, however, were the tostadas, made from fried whole corn tortillas with a little salt.
Chili’s Restaurant makes their own in house and they are the best I’ve ever had. You can buy them to take home as well.........

Chicken Enchilada Dip
An irresistible game day favorite, creamy and cheesy.
Ing 8-oz bar cr/cheese, 1 c red enchilada sauce 1 1/2-2 cups cooked shredded chicken, 4.5-oz can diced green chiles 1-1 ½ c shredded pepperjack, divided (monterey jack works too) ¼ c chp fresh cilantro , divided 1 tsp taco seasoning. Tortilla chips , for serving. Optional toppings: Chopped cilantro, Sliced green onions, Sliced tomatoes, Sliced avocado.
Steps Elec/mixer cr/cheese smooth/creamy. Mix in well 1 cup enchilada sauce. Stir in 1 1/2–2 c cooked chicken, 1 can green chiles, 3/4 c shredded cheese, 2 Tbl cilantro, 1 tsp taco seasoning to combine. Bake in sprayed b/dish 375 deg 20 to 25 min, cheese is bubbly. Remove and top w/ 3/4 c cheese; broil cheese lightly golden. Top w/ 2 Tbl cilantro. Serve with fresh tortilla chips.
Notes Storage: store airtight in fridge 3 days. To make-ahead: Prepare dip as directed. Saran tightly, place in fridge 24 hrs; let sit at room temp about 10 min before baking. Chicken: Use rotisserie or cooked canned chicken. Variations: Can add black beans or corn.
Crockpot Version: Place cream cheese, enchilada sauce, chicken, chiles, 3/4 cup cheese, 2 Tablespoons cilantro, and taco seasoning in crockpot. Stir together. Cook on low 1 hour, or until cheese is bubbly. Before serving, add remaining cheese on top and broil for a couple minutes.
