NATIONAL HOMEMADE SOUP DAY

February 4th heats up with National Homemade Soup Day. In every cuisine, soup provides a rich basis of flavor and history.

Before the era of modern transportation, soup was a product of regionally available foods. For this reason, there are thousands of soup recipes available today.

Many soups also offer medicinal properties. What was once considered a wive’s tale, chicken soup now has the backing of the scientific community. Yes, chicken soup helps relieve the symptoms of the common cold. How? Well, scientists believe that a bowl of soup may reduce inflammation of the lungs. It is thought that chicken soup slows down the activity of white blood cells that can cause inflammation.

But that’s not all homemade soup does. Every cook knows the most important ingredient that goes into every pot of simmering soup. They keep the ingredient stored where it will do its best work, too. As they work, they season the soup from their heart giving it just the right amount of love each and every time. A. Home cooks use a variety of broths for the base of their soups. Consider using vegetables, chicken, beef, pork, or other meat to create your broth. Adding milk or cream will create a creamy soup.

Q. Can I use store-bought broth to make a homemade soup?

A. Yes! Though homemade broth is delicious, you can cut down some of the time and effort by using canned or box broth.

Q. Is making homemade broth easy?

A. It really isn't that difficult to make homemade broth. For example, chicken broth can be made from leftover chicken. Be sure to include the bones and vegetables such as carrots, celery, and onions for additional flavor.

Nice, Dad was the ultimate soup maker and I inherited his passion. Today is the 30th anniversary of him passing. Fitting it’s now national soup day!

Mmmmmmm.....this is from their web site.

Kale Potato Leek Soup / 6 SERVINGS

Ingredients 2 tbsp oil neutral oil, such as canola 4-5 potato(es) russet, medium, (1 pound), peeled and roughly chopped 3 leek(s) large, (1 pound), cleaned and thinly sliced 1 bunch kale chopped (1/2 pound) 6 cups vegetable stock or chicken stock kosher salt to taste 1-2 tbps lemon juice freshly squeezed 1/2 cup heavy cream pepper freshly ground 1/2 cup sour cream 2 bay leaves dried bacon bits for garnish finely chopped kale for garnish

Instructions Heat the oil in a large (6-plus quart) stockpot or dutch oven over medium heat. Add the leek and potato and kale . Cook, stirring occasionally, until the vegetables have begun to soften and brown slightly, about 8 to 12 minutes (this time will vary greatly depending on the surface area of the bottom of your pot). Add the vegetable stock and bay leaves, and bring to a boil. Reduce the heat to low, and simmer for 30 to 40 minutes, or until the vegetables are tender.

Blender smooth. Add the cream, and season to taste w/ salt, lemon juice and pepper.
Ladle into bowls, and garnish w/ sour cream and a sprinkling of kale or bacon bits.

I love homemade soup, especially on these cold days. A bowl of chunky soup with a crusty roll, that’s a whole meal.

My favorite soup from my roots in South Dakota. Interesting that a very similar soup is a staple in Luxembourg cuisine.

I’ve been losing weight so doing Keto soups. Gonna try a new one today, Keto Zuppa Toscana. The “potatoes” are, of course, cauliflower.

Ordered a ‘Used - Very Good’ copy from Amazon ($6.53 & free delivery). :-)

BTW, the cookbook I got from Dollar Store was at least $10 for a used copy on Amazon. Some were cheaper, but you had to pay for delivery.

I have found that turnips work well in place of potatoes.

I make beef barley soup and use onions, carrots, and turnips instead of potatoes.

Mr mm found out he actually liked it better with the turnips. They don’t get as mushy and mealy. Matter of fact, I had to use potatoes one time cause I couldn’t buy any turnips and he asked *What’s wrong with the potatoes?* I told him they were real potatoes this time.

A stunned silence and he asked *What do you usually use?* I told him *Turnips*.

He says, *But I don’t like turnips. I think.*

Turns out, done right, he does.
