When my husband was diagnosed with liver cancer and given three months to live (he refused chemo, which we were told would give him an extra very miserable month) - I did a lot of research and “mushroom extracts” kept coming up - I ended up giving him several supplements made from mushrooms - Chaga, Lion’s Mane, Maitake. His scans showed the tumors shrinking.

He ended up living four years, confounding his doctors.

Shiitakes are one of the easier mushrooms to grow, much easier than “buttons” (which turn into criminis, which turn into portobellos), despite buttons being cheaper and more widely available.

Thanks! They sell shitake mushrooms at Trader Joes. I also buy them Dehydrated from the local Oriental Food store and use them in my Ramen soup. The stems are very woody so do not use them for cooking. You can use dried stems for making stock.
