NATIONAL FRITTERS DAY

National Fritters Day on December 2nd allows for no frittering away of the time. So make haste and get them while they are hot!

Fritters come in various forms, from morsels dipped in flavorful batters to bits of dough stuffed or filled with delicious surprises. All of the varieties are deep-fried and served hot with dips, drips, or dustings of seasonings, sweets, or sauces. Cultures all over the world make some kind of fritter. May believe Ancient Romans first consumed fritters. They then introduced them to Europe. Most commonly filled with fruit or cheese, fritters can also be filled with savory meats, seafood, and vegetables.

A. Fritters can be either sweet or savory. The base ingredient often determines which direction the fritter leans. Potatoes, zucchini, apples, bananas, fish, corn, and cheese can all be used to make fritters.

Q. Are fritters a type of donut?

A. Fritters, especially the sweet kind, are very similar to donuts. Where donuts are usually topped with sweet additions, bakers fold ingredients into fritters. Donuts are also cut into symmetrical shapes, while fritter batter is directly dropped into the oil for cooking.

When I worked at Davidson’s Bakery in DeKalb, Illinois in the 1980s, Bill Davidson would make fritters using all kinds of leftovers - raised and cake donut dough, pie crust and sometimes scraps of pastry dough. Mixed together with apple chunks and well-fried, then glazed heavily. They were perfect. Now I eat one or two a year from wherever I find them and it always reminds me of Bill standing there cutting and weighing dough making cakes at 3:00 in the morning.

Cinnamon Glazed Apple Fritters
Celebrate the season with glazed homemade apple fritters; easy to make too.

Ing for 12 fritters 3-4 cups canola oil 3 cups Fuji apples peeled, cored, and diced, 2 teaspoons fresh l/juice, 1 ½ c flour ⅓ cup sugar 1 ½ teaspoons baking powder ½ teaspoon salt ¾ teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ cup whole milk 1 large egg lightly beaten 3 tablespoons unsalted butter melted and slightly cooled 1 tsp vanilla.

Glaze: 2 cups conf 4-5 tablespoons milk or water 1 teaspoon vanilla ¼ teaspoon cinnamon

Mix diced apples and lemon juice. Set aside. Separately whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg til well combined. Make a well in the center. Pour in the milk, egg, melted butter and vanilla extract and mix until just combined.

Gently fold in the apples until mostly coated in batter. Once the oil reaches 375°F (190°C), grease a ¼ cup measuring cup with nonstick cooking spray or use a large scoop, and measure out ¼ cup batter. Transfer the batter onto a large metal spatula coated with nonstick cooking spray and flatten into a medium disc. Carefully lower the battered spatula into the hot oil and the batter should slip off quite easily. If needed, you can use a spoon or fork to help slide the batter off the spatula into the oil. Cook 3-4 fritters 2 min per side til golden brown, then transfer to paper towels to cool.

Glaze: Whisk conf, milk, vanilla, and cinnamon. The glaze should be on the thinner side. If the glaze is too thin, add extra powdered sugar to thicken it. If it's too thick, add a little extra milk to thin it out. Once the fritters have slightly cooled, dip each fritter into the glaze. If you have any extra glaze leftover, redip the fritters or simply pour the remaining glaze over them.

Notes: Store cooled fritters in ziplock on the counter for up to 1 day or fridge up to 4 days.
Reheat 300 deg 8-10 min. Microwave as a quick snack.

I occasionally pick up a 6 pack of apple fritters at WalMart on their “reduced for quick sale” rack... They are very good, bargain price.
