The way it works is a letter stands for another letter. For example: AXYDLBAAXR is LONGFELLOW (does not apply to today's cryptogr)am).

Depends. Knowing that one's family will starve if one does not break one's back tending crops in bad weather from dawn to dusk is a great motivator. Knowing that one's family will starve regardless of one's efforts makes weather, tedium and weariness great incentives to shun work.
Watch the movie, Homestead. It looks closely at that question for some preppers in a time following a nuclear attack. The movie presents different viewpoints, from a Christian perspective.
