We have an orchard nearby and besides apples, has many other produce items in its market. Right now sweet potatoes and yams are in.

My neighbor who works there sometimes (giving grade school kids tours) sent me this recipe, that she says is wonderful. I haven’t tried it yet, but plan to. She uses candied pecans when she makes it.

Roasted Sweet Potatoes with Apples

Roasted Sweet Potato and Apples just like Grandma used to make are super simple to make. So simple in fact, you will scratch your head thinking surely there is more to it. Trust me, it’s just an easy recipe to make the best Roasted Sweet Potatoes and Apples you’ve ever had.

Course: Side DishCuisine: American Prep Time: 5 minutes minutesCook Time: 25 minutes minutes Servings: 6 Calories: 214kcal

Ingredients
2 Sweet Potatoes
2 Granny Smith Apples
⅓ Cup Pecan Pieces
¼ Cup Dried Cranberries
1 teaspoon Cinnamon
2 Tbs Olive Oil
2 Tbs Maple Syrup

Instructions
Preheat Oven to 400 Degrees
In a small bowl combine Olive Oil, Maple Syrup and Cinnamon. Stir to combine. Set aside
Wash and Peel Sweet Potatoes
With a sharpe knife, slice rounds about ¾ inch thick. Then slice each round into 6-8 wedges. I find a smaller wedge works perfectly in this recipe so the Apples don’t over cook.
Peel and core apples. Slice each wedge into 2-3 chunks. Keep Apple Chunks larger than Sweet Potatoes
Toss Sweet Potatoes wedges and Apple Slices into olive oil mixture until well coated.
Add Pecans and Craisins. Toss to coat
Bake at 400 Degrees for 22-25 minutes or until desired texture is achieved
Serve Hot

Notes
Cut Sweet Potatoes in ¾ inch rounds. Cut each round into 6-8 wedges. Sweet Potatoes are a hard dense vegetable. Smaller wedges will cook more evenly.
Slice each Apple into 2-3 larger chunks. You can choose to peel apples or leave peels on. It’s personal preference.
Sweet potatoes are high in beta carotene, vitamins E and C, iron, potassium and vitamin B-6. So eat up! It’s a good veggie to enjoy. And Sweet Potatoes and Yams are 2 different vegetables. Although many refer to them interchangeable.

Maybe watch Mass on tv? Since the pandemic, even our little parish has taken to putting it on YouTube for those unable to come. They cut down our attendance by 2/3 for over a year, so having it available on YouTube was helpful.

I’m harvesting probably the last of my French Tarragon this week. It’s starting to dry out so I want to get in what I can before it’s totally gone.

On the other hand, my oregano is still going like gangbusters. I’ve harvested some to start drying to give as gifts. I haven’t decided whether to mince it first and then let it dry, or to hang it and dry it first, before cutting into smaller pieces.

Does anyone have experience with drying oregano?

I’ve been in this ankle brace since noon and it really helps the ankle stability. Going to go tonight with hubby and just use my walking sticks. Our diocese has live TV Mass but I would rather be there for the Eucharist. Pus my Mom’s 101st birthday in heaven is tomorrow. Hubby will go over and light a candle for her. Thanks for any prayers. Prayer works!

Mom and her BFF were here again today to raid the garden one last time. I told her how delicious the Sabres were, so we dug around and found some more so she could take a few home to eat, too.

She cleaned me out of apples - I can’t reach the remaining ones so my ‘Bumble’ will have to do it when he gets home next week from Bear Camp.

We also picked and shelled a HUGE basket of Good Mother Stollard dry beans that were ready to go. I am estimating that I’ll have another basket full in a few weeks when the rest of them are dry enough to shell; the don’t all dry at the same time for some reason.

We got a lot accomplished today! I ‘Tom Sawyered’ her into all sorts of projects, LOL!

That log looks SO good, but I'm going to build it over cream cheese or fresh Mozzarella. Love the honey, fig jam and pistachios, of course.

Try as I might, I cannot get myself to like goat cheese. I've tried them all and have yet to find a brand that doesn't TASTE to me like a Billy Goat SMELLS. ;)

I know what you mean about goat cheese. That taste is from a dairy that has bucks running with the does. Disgusting smell. We only kept the girls and you could not taste anything but fresh clean milk. I remeber soe of ur daughters fiends were over and I used a store bough milk jug and filled it with our ilk. they all said what good milk. I didn’t tell them until it was time to go home. I can eat the soft goat cheese from the grocery store. Nothing fancy.
