We have an orchard nearby and besides apples, has many other produce items in its market. Right now sweet potatoes and yams are in.

My neighbor who works there sometimes (giving grade school kids tours) sent me this recipe, that she says is wonderful. I haven’t tried it yet, but plan to. She uses candied pecans when she makes it.

Roasted Sweet Potatoes with Apples

Roasted Sweet Potato and Apples just like Grandma used to make are super simple to make. So simple in fact, you will scratch your head thinking surely there is more to it. Trust me, it’s just an easy recipe to make the best Roasted Sweet Potatoes and Apples you’ve ever had.

Ingredients
2 Sweet Potatoes
2 Granny Smith Apples
⅓ Cup Pecan Pieces
¼ Cup Dried Cranberries
1 teaspoon Cinnamon
2 Tbs Olive Oil
2 Tbs Maple Syrup

Instructions
Preheat Oven to 400 Degrees
In a small bowl combine Olive Oil, Maple Syrup and Cinnamon. Stir to combine. Set aside
Wash and Peel Sweet Potatoes
With a sharpe knife, slice rounds about ¾ inch thick. Then slice each round into 6-8 wedges. I find a smaller wedge works perfectly in this recipe so the Apples don’t over cook.
Peel and core apples. Slice each wedge into 2-3 chunks. Keep Apple Chunks larger than Sweet Potatoes
Toss Sweet Potatoes wedges and Apple Slices into olive oil mixture until well coated.
Add Pecans and Craisins. Toss to coat
Bake at 400 Degrees for 22-25 minutes or until desired texture is achieved
Serve Hot

Notes
Cut Sweet Potatoes in ¾ inch rounds. Cut each round into 6-8 wedges. Sweet Potatoes are a hard dense vegetable. Smaller wedges will cook more evenly.
Slice each Apple into 2-3 larger chunks. You can choose to peel apples or leave peels on. It’s personal preference.
Sweet potatoes are high in beta carotene, vitamins E and C, iron, potassium and vitamin B-6. So eat up! It’s a good veggie to enjoy. And Sweet Potatoes and Yams are 2 different vegetables. Although many refer to them interchangeable.
