They were in their favorite diner and the waitresses and cooks didn’t want to be in the picture.
Notice there is no challis in the painting because Jesus became that challis.
The painting is in a lot worse condition than the second photo shows. Fresco mixes paint with plaster so the color is worked into the wall. Leonardo just painted the dry wall, so the color didn’t sink in, and the damp from the wall caused the paint to flake off.

Best laugh I’ve had so far, today!
There are a number of Last Suppers by Renaissance masters, many of them in Florence. The table arrangement is an artistic convention used by all. Most of them are found in refectories btw, as is da Vinci’s.
(There's no escape even on that point -- heh, it's always something.)
