Not a Catholic, but I've been to many Catholic weddings, and I've never see that tradition. I've always seen the groom enter from the side of the altar area with his best man facing the aisle to await his bride, and the bride walks the aisle with her father (or a suitable substitute if he is not available, such as the mother who raised her, an uncle or a brother). Bride and groom walking the aisle side by side in a church wedding doesn't appear to be statutory in the Bible, so is it perhaps a local tradition?
Your insistence that rejecting her father’s traditonal role in a church wedding is “relatively minor” is way off base. It’s a cut to the heart, and a public display of indifference to his place in her life in front on all their family and friends.
You’ve mentioned the “minor” thing that “tore your family apart.” Starting to think it was not so minor. Without naming names, can you clue us in as to what it was?
Admittedly, she may be just as you say, an “influencer” in it for a profit — there are many such people (significant numbers, but low percentages of the total). But, having several Gen Z kids and a circle of their friends to observe, she sounds like a very average Gen Z female who, on a top level has been brainwashed by college professors and peers and is a believer of that garbage. Most of the Gen Z just live in the social networks and have trite, wrong-headed thinking and no ability to perform critical thinking. Consequently, it’s possible it’s exactly what it looks like. If it is what it looks like, her parents are obligated to follow a course like that which has been described.

I saw the video. It's based on a reddit story. Sometimes they're true. Sometimes they're fake. So you'll have to go to reddit to find out if this story is true or not.
This girl is just telling the reddit story for clout.
