I guess I don’t think of French toast as an egg thing, even though it obviously is. I need to learn that some of the “rules” I grew up with were pretty arbitrary.

Lockdown and being glued to a computer 9 hours per day did a number on my appetite and desire to cook.

I’d order hamburgers, and then re-heat them for breakfast.

(One of the few delivery things that would stand up to that.)

Normally, my favorite breakfast is poached eggs on toast...I’ve never had French Toast, and will have to try it.

I’ve heard a lot about In N Out, but we don’t have them here.

We don’t really have the greatest burger places nearby. We used to have one that was really great, but it was a smaller businesses that failed during Covid.

Fixing French Toast for guests, I ran short of enough eggs!

I sighted some VERY ripened soft bananas and—with my guests’ approval—added them to the mix.

The bananas didn’t dominate the flavor—added syrup—and would categorize that breakfast as Delicious!

Bananas are a great egg substitute. I make muffins with bananas instead of eggs for the calorie savings. They don’t get as tall and fluffy as ones with eggs, but I can eat them without guilt. The way I make them they’re around 90 calories each instead of about 200 (or more). I don’t use oil either. I use applesauce in place of the oil. That’s probably the bigger savings.
