Chicken soup works great at fighting colds. But you know what else does too? Turkey soup. I first made turkey soup last Thanksgiving and I immediately felt healthier although I didn’t have a cold. I plan on making turkey soup again this Thanksgiving and perhaps making a video about it.

I boil the turkey carcass in the same pot I used for the mashed potatoes. The leftover mashed potatoes clinging to the sides of the pot thicken the broth and make for a bit richer soup..

I have British cookbooks.
Christmas turkey:
Stuff & truss/sew the turkey, then boil it.
Remove from pot when done, and place in a hot oven to brown it.
Use the water from boiling to make the first course soup.
I have certainly never gotten up the nerve to try it; instead our turkey or chicken soups come from boiling down the carcass remains.
