Giacomo Chiapparini, 74, was buried when a shelf broke in his warehouse in the Lombardy region on Sunday, firefighter Antonion Dusi told AFP.
The collapse created a domino effect bringing down thousands of wheels, which weigh about 40kg (84lbs) each.
It took 12 hours to find Mr Chiapparini's body, Mr Dusi said.
Some of the wheels reportedly fell about 10m (33ft) and a local resident told Italian media the collapse sounded "like thunder".

This was in Italy.
If this workplace tragedy happened here in the states,
the surviving family or the estate of Giacomo Chiapparini
may ask OSHA to investigate. Apparently, nobody has been checking on the condition of those cheese shelves for quite some time.
Any reinforcement structures underneath the shelves seems to have splintered or been nibbled away by mice away long ago.
At very least, his widow will want what remains of his pension. She is unlikely to take the value of that pension in the form of cheese wheels. There is not enough room in her kitchen for that many wheels.
As much as i love Italian cheese... I wouldn’t want to go out that way...Maybe fall in a fondu pot...
